Watergate Salad

Watergate Salad is a classic, nostalgic dessert that combines the flavors of pistachio, pineapple, and fluffy marshmallows in a creamy, dreamy mixture. This easy-to-make salad is perfect for potlucks, family gatherings, or any time you need a sweet treat that everyone will love.

Ingredients

Homemade Whipped Cream:
  • 3 cups heavy whipping cream
  • 1 cup powdered sugar
  • 1 1/2 teaspoons vanilla extract
Remaining Ingredients:
  • 1 (3.4 ounce) package instant pistachio pudding mix
  • 1 (20 ounce) can crushed pineapple, undrained
  • 3 cups mini marshmallows

Instructions

  1. Prepare the Whipped Cream:
  • In a large mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract.
  • Using a whisk attachment on a stand mixer or a hand mixer, beat the mixture on medium-high speed until soft peaks form. This should take about 3-5 minutes. Be careful not to overbeat, as the cream can turn into butter.
  1. Combine the Ingredients:
  • Gently fold the instant pistachio pudding mix into the whipped cream until fully incorporated.
  • Add the crushed pineapple (including the juice) and mini marshmallows to the whipped cream and pudding mixture. Fold gently to combine all ingredients evenly.
  1. Chill and Serve:
  • Cover the bowl with plastic wrap or transfer the mixture to an airtight container.
  • Chill the Watergate Salad in the refrigerator for at least 1-2 hours before serving. This allows the flavors to meld together and the salad to set.

  • Whipping Cream: Ensure your cream is very cold before whipping, as this will help it whip up faster and more effectively.
