Walking Taco Casserole is the ultimate comfort food, combining all the delicious elements of a taco in a warm, baked dish. This casserole features layers of seasoned ground beef, crunchy Fritos, and gooey cheddar cheese, topped with fresh vegetables for a satisfying meal that’s sure to please everyone.

Ingredients:

  • For the Casserole:
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 (10.5 oz) can Ro-Tel diced tomatoes and green chilies
  • 2 cups shredded cheddar cheese
  • 1 (9.25 oz) bag of Fritos
  • 2 cups shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced onions
  • For Toppings:
  • Sour cream
  • Salsa
  • Jalapeños

Instructions:

1. Preheat and Prepare:

  • Preheat your oven to 350°F (175°C).
  • Grease a casserole dish and set it aside.

2. Cook the Beef:

  • In a large skillet, cook the ground beef over medium heat until it’s no longer pink. Drain any excess fat.
  • Add the taco seasoning and Ro-Tel tomatoes to the skillet. Stir until well combined and let the mixture simmer for about 5 minutes.

3. Assemble the Casserole:

  • Start by spreading half of the Fritos on the bottom of the prepared casserole dish.
  • Over the Fritos, layer half of the beef mixture, followed by half of the shredded cheddar cheese.
  • Repeat the layers: add the remaining Fritos, the rest of the beef mixture, and top with the remaining cheese.

4. Bake:

  • Place the casserole in the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and golden.

5. Top and Serve:

  • Once baked, remove the casserole from the oven and let it cool slightly.
  • Top with shredded lettuce, diced tomatoes, and diced onions.
  • Add your desired toppings, such as sour cream, salsa, and jalapeños.
  • Serve warm and enjoy!
