The Best Banana Cake Recipe

Ingredients:

For the Cake:

  • 1 1/2 cups ripe bananas, mashed
  • 2 teaspoons lemon juice
  • 3 cups flour
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 3/4 cup butter, softened
  • 2 1/8 cups sugar
  • 3 large eggs
  • 2 teaspoons vanilla
  • 1 1/2 cups buttermilk

For the Frosting:

  • 1/2 cup butter, softened
  • 1 (8-ounce) package cream cheese, softened
  • 1 teaspoon vanilla
  • 3 1/2 cups icing sugar

How to Make the Best Banana Cake:

  1. Preheat and Prepare:
  • Preheat the oven to 275°F / 135°C. Grease and flour a 9 x 13-inch pan.
  1. Banana Mixture:
  • In a small bowl, mix mashed banana with lemon juice; set aside.
  1. Dry Ingredients:
  • In a medium bowl, mix flour, baking soda, and salt; set aside.
  1. Cream Butter and Sugar:
  • In a large bowl, cream 3/4 cup butter and 2 1/8 cups sugar until light and fluffy.
  1. Incorporate Eggs and Vanilla:
  • Beat in eggs, one at a time, then stir in 2 teaspoons vanilla.
  1. Alternate Mixing:
  • Beat in the flour mixture alternately with the buttermilk.
  1. Add Banana Mixture:
  • Stir in the banana mixture until well combined.
  1. Bake:
  • Pour the batter into the prepared pan and bake in the preheated oven for one hour or until a toothpick inserted in the center comes out clean.
  1. Freeze for Moisture:
  • Remove from the oven and place directly into the freezer for 45 minutes. This step enhances the moisture of the cake.

For the Frosting:

  1. Cream Butter and Cream Cheese:
  • Cream the 1/2 cup butter and softened cream cheese until smooth.
  1. Add Vanilla:
  • Beat in 1 teaspoon vanilla.
  1. Incorporate Icing Sugar:
  • Add icing sugar and beat on low speed until combined, then on high speed until the frosting is smooth.
  1. Frost the Cake:
  • Spread the frosting on the cooled cake.
  1. Optional Toppings:
  • Sprinkle chopped walnuts over the top of the frosting if desired, or create decorative patterns.

Tips:

  • Use ripe bananas for an intense banana flavor.
  • Allow the cake to cool before frosting to prevent melting.
  • Experiment with different nuts or fruits for varied textures and flavors.
  • Decorate with banana slices or additional lemon zest for a visually appealing presentation.
  • Store leftovers in the refrigerator to maintain freshness.
