Taco Casserole

This Taco Casserole is a flavorful, layered dish that combines the best of taco night into one easy-to-make meal. With layers of creamy refried beans, savory ground beef, and melted cheese topped with crunchy chips and fresh veggies, it’s a crowd-pleaser perfect for family dinners, potlucks, or game days. The best part? It’s customizable with your favorite taco toppings like olives, tomatoes, and even shredded lettuce for a refreshing finish.


Ingredients:

  • ¾ cup Doritos or tortilla chips
  • 1 lb ground beef
  • 1 small yellow onion, diced
  • ¾ cup sour cream (full-fat, avoid light)
  • 2 cups shredded Cheddar cheese
  • 1 (16 oz) can refried beans
  • 2 tbsp taco seasoning
  • ¼ cup sliced black olives

Garnish:

  • ⅓ cup diced fresh tomatoes
  • ⅓ cup shredded lettuce (optional)
  • Green onions, chopped

Instructions:

1. Preheat the Oven:
Preheat your oven to 350°F.

2. Cook the Beef Mixture:
In a skillet over medium heat, sauté the diced onion and ground beef until the onions become translucent and the beef is browned. Drain any excess fat from the skillet. Stir in taco seasoning and ¾ cup of water, bringing the mixture to a boil. Reduce heat and simmer for about 5 minutes. Remove from heat and allow the beef mixture to cool slightly.

3. Layer the Casserole:
In a 9×13-inch baking dish, begin by spreading an even layer of refried beans across the bottom. Next, evenly spread the sour cream over the beans. Add the cooled ground beef and onion mixture as the third layer. Top the beef with 2 cups of shredded Cheddar cheese.

4. Bake:
Place the dish in the oven and bake uncovered for 15 minutes or until the cheese is melted and bubbly.

5. Add Crunch and More Toppings:
After 15 minutes, remove the casserole from the oven and top it with sliced black olives and crushed Doritos or tortilla chips for a crunchy layer. Return to the oven and bake for another 8 minutes to let the chips crisp up.

6. Garnish and Serve:
Remove the casserole from the oven and garnish with diced tomatoes, chopped green onions, and shredded lettuce if desired. Serve immediately and enjoy!
