Sweet Potato Pie

This Sweet Potato Pie combines the natural sweetness of sweet potatoes with a buttery pie crust, creating a deliciously comforting dessert. Enjoy it warm or cold, and don’t forget to share the goodness with your loved ones!

Sweet Potato Pie Recipe

Ingredients:

  • 2 cups cooked and mashed sweet potatoes (about 3)
  • 1 1/2 tsp sugar
  • 2 tablespoons flour
  • 1 packet (5-ounce) divided evaporated milk
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla
  • 1 9-inch pie crust, uncooked

Glaze:

  • 1/2 teaspoon sugar
  • 2 1/4 teaspoon flour
  • 2 tablespoons melted butter
  • 2 tablespoons evaporated milk (from the box above)
  • 1/4 cup halves pecans, optional

How to Make Sweet Potato Pie:

  1. Preheat Oven: Preheat the oven to 375°F. Lay the pie crust on a cookie sheet.
  2. Prepare Filling: In a bowl, combine sugar, flour, milk (set aside 2 tablespoons for use in the glaze), beaten egg, and vanilla. Add the mashed sweet potatoes and mix well.
  3. Fill the Pie Crust: Pour the sweet potato mixture into the uncooked pie crust, spreading it evenly.
  4. Prepare Glaze: In a separate bowl, mix sugar, flour, melted butter, and 2 tablespoons of milk (reserved from the filling). Pour the glaze over the sweet potato mixture. If desired, garnish with pecan halves.
  5. Bake: Bake for about an hour or until the crust is golden in color. To check for doneness, insert a knife near the center, and if it comes out clean, the pie is ready.

Tips:

  1. Sweet Potato Texture: Ensure that the sweet potatoes are thoroughly cooked and well-mashed for a smooth filling.
  2. Glaze Variation: If you prefer a less sweet pie, you can skip the glaze or reduce the sugar in the glaze.
