This Sweet Chili Roasted Chicken and Vegetables recipe is a simple yet flavorful dish perfect for busy weeknights. With juicy chicken, tender broccoli, cauliflower, and carrots, all coated in a tangy sweet chili sauce, this meal is both nutritious and satisfying. It’s quick to prepare and can be cooked in either a convection or conventional oven, making it versatile and convenient.

Ingredients

  • 1.25 pounds boneless skinless chicken breasts, diced into bite-sized pieces
  • 3 cups broccoli florets
  • 3 cups cauliflower florets
  • 2 large carrots, sliced into 1/4-inch rounds on the bias
  • 2 to 3 tablespoons olive oil
  • 1/2 teaspoon freshly ground black pepper, or to taste
  • 10 ounces sweet chili sauce, divided

Instructions

  1. Preheat Oven:
  • Preheat your oven to 425°F. Use a convection setting if available for more even cooking, but a conventional oven works well too.
  1. Prepare the Baking Sheet:
  • Line a sheet pan with aluminum foil for easier cleanup.
  1. Combine Ingredients:
  • Place the diced chicken, broccoli, cauliflower, and carrot slices onto the prepared baking sheet.
  • Drizzle with olive oil and season with freshly ground black pepper.
  1. Add Sauce and Toss:
  • Drizzle 3/4 of the sweet chili sauce over the chicken and vegetables. Toss with your hands to ensure everything is evenly coated.
  1. Roast:
  • Roast in the preheated oven for about 14-15 minutes if using a convection oven, or 17-18 minutes in a conventional oven. Check for doneness—chicken should be cooked through and vegetables should be crisp-tender. Watch the food rather than the clock for best results.
  1. Finish and Serve:
  • Once cooked, drizzle the remaining sweet chili sauce over the dish if desired.
  • Serve immediately.

Tips

  • Vegetable Size: Cut vegetables uniformly to ensure even cooking.
  • Sauce Adjustments: Adjust the amount of sweet chili sauce to suit your taste. Add more for a spicier kick or less for a milder flavor.
  • Storage: Store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to 4 months.
  • Meal Prep: This dish is excellent for meal prep. Portion out into individual containers for easy grab-and-go meals throughout the week.
