Sweet Blueberry Biscuits

These Sweet Blueberry Biscuits are a delightful treat that combines the comforting flavors of traditional biscuits with the sweetness of blueberries. Topped with a glaze, they make for a perfect breakfast or dessert option.

Ingredients:

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 cup cold milk
  • 1/3 cup sugar
  • 5 tablespoons cold or frozen butter
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 3 ounces fresh or dried blueberries

For the Glaze:

  • 1 cup powdered sugar
  • 1/8 cup water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon juice

Instructions:

  1. Preheat the Oven:
  • Preheat your oven to 450°F (230°C).
  1. Prepare the Biscuit Dough:
  • In a large bowl, mix together the salt, sugar, flour, and baking powder. Add the cold milk and blueberries to the dry ingredients and mix until just combined.
  1. Incorporate Butter:
  • Remove one stick of butter from the freezer and break it into small chunks. Spread the frozen butter chunks evenly over the biscuit dough. Fold and knead the dough until all the butter chunks are distributed evenly.
  1. Roll and Cut the Biscuits:
  • Place the dough on a floured surface and roll it out to about 1/4 to 1/8 inches thick. Use a biscuit cutter to cut out approximately 6 biscuits from the dough.
  1. Bake the Biscuits:
  • Transfer the biscuits to a baking sheet lined with parchment paper and bake in the preheated oven for 7 to 12 minutes, or until they are golden brown.
  1. Prepare the Glaze:
  • While the biscuits are baking, prepare the glaze by mixing together the powdered sugar, water, vanilla extract, and lemon juice until smooth.
  1. Glaze the Biscuits:
  • Once the biscuits are baked and still hot, brush the tops with melted butter. Then, drizzle the prepared glaze over the warm biscuits.
  1. Serve and Enjoy:
  • Allow the biscuits to cool slightly before serving. These sweet blueberry biscuits are best enjoyed warm and fresh out of the oven.

Tips:

  • For flakier biscuits, make sure to keep the butter cold or even freeze it before incorporating it into the dough.
  • If using frozen blueberries, you can toss them in a little flour before adding them to the biscuit dough to prevent them from sinking to the bottom.
  • Adjust the sweetness of the glaze to your preference by adding more or less powdered sugar.
