Sushi Rice and California Rolls

This Sushi Rice and California Rolls recipe makes it easy to recreate one of the most popular sushi rolls at home, complete with a delicious homemade sushi rice and a fresh, classic California roll filling. With creamy avocado, crisp cucumber, and savory imitation crab, each bite captures the signature textures and flavors of this sushi favorite. Ingredients

For Perfect Sushi Rice:

  • 2 cups Japanese short or medium grain rice
  • 2 1/2 cups cold water
  • 5 Tbsp Sushi Vinegar (or make your own using the ingredients below)

Homemade Sushi Vinegar:

  • 4 Tbsp Rice vinegar
  • 2 Tbsp sugar
  • 2 tsp salt (sea salt recommended)

For California Rolls:

  • 1/2 lb imitation crab meat, preferably “log” shaped for easy rolling
  • 1 avocado, ripe but firm, sliced
  • 1/2 cucumber, peeled and cut into julienne strips
  • Toasted nori seaweed sheets
  • Toasted sesame seeds
  • Sushi rolling mat (or substitute parchment paper)

For Dips/Sauces:

  • Soy sauce (regular or low-sodium)
  • Wasabi paste or powder
  • Spicy Mayo: Mix 1 Tbsp mayonnaise with 1 tsp Sriracha, or adjust to taste

Instructions

Step 1: Make Perfect Sushi Rice

  1. Wash the Rice: Rinse the rice with cold water until the water runs clear, then drain well. For a rice cooker, simply follow the machine instructions for white rice. If cooking on the stovetop, continue with the steps below.
  2. Cook the Rice (Stovetop Method):
  • Place the drained rice in a heavy saucepan, add 2 cups of cold water, cover, and bring to a boil over high heat.
  • Once it reaches a boil, reduce heat to medium and let it cook, covered, until the water is absorbed (about 7-8 minutes). Don’t remove the lid; instead, listen for the bubbling to stop.
  • Reduce heat to very low and cook for another 6 minutes. Remove from heat and let it stand, covered, for 15 minutes.
  1. Season the Rice: Transfer the hot rice to a large bowl and break it up to remove clumps. Allow it to cool until just warm, then gently stir in the cooled sushi vinegar.

Step 2: Assemble California Rolls

  1. Prep Your Rolling Mat: Wrap the sushi rolling mat in plastic wrap for easy cleanup.
  2. Prep the Ingredients:
  • Toast sesame seeds in a skillet over medium heat, stirring constantly until golden.
  • Slice the avocado, cucumber, and crab meat into desired shapes.
  1. Assemble the Rolls:
  • Fold each nori sheet in half to create two smaller sheets.
  • With wet fingertips, spread a generous handful of sushi rice onto a half-sheet of nori, covering the entire surface. Flip the nori over so the rice side faces down.
  • Place the crab, cucumber, and avocado along the center of the nori sheet.
  1. Roll the Sushi:
  • Using the mat, start rolling the nori and fillings away from you, pressing firmly for a tight roll.
  • Sprinkle toasted sesame seeds over the roll. With a sharp knife, slice the roll in half, then slice each half into even 1-inch pieces.

Tips for Sushi Success

  • Wet Your Hands and Knife: Keep your hands and knife damp to prevent rice from sticking.
  • Don’t Overfill: Use a modest amount of filling to prevent the roll from breaking.
  • Slice Quickly: Quick slicing motions make cleaner cuts without crushing the roll.
