Strawberry Shortcake Cheesecake combines the classic flavors of strawberry shortcake with the indulgent richness of cheesecake, creating a delightful dessert that’s perfect for any occasion. This decadent treat features a buttery shortbread cookie crust, creamy cheesecake filling infused with vanilla bean paste, layers of fresh strawberries and fruit spread, and a fluffy whipped sour cream topping. Each bite offers a harmonious balance of sweet and tangy flavors, making it a crowd-pleasing dessert that will leave everyone wanting more.

Ingredients:

  • Shortbread Cookies: Provide a crunchy and buttery base for the cheesecake, adding texture and flavor to the dessert.
  • Butter: Binds the crushed cookies together to form the crust, adding richness and moisture.
  • Cream Cheese: Creates the creamy and luscious base for the cheesecake, offering a velvety texture and tangy flavor.
  • Vanilla Bean Paste: Infuses the cheesecake filling with aromatic vanilla flavor and specks of vanilla bean, enhancing its overall taste.
  • Sour Cream: Adds tanginess and creaminess to the filling, balancing the sweetness of the other ingredients.
  • Heavy Whipping Cream: Whips up into a light and airy texture, contributing to the smoothness and richness of the cheesecake.
  • Confectioner’s Sugar: Sweetens the filling and whipped cream topping, ensuring a perfect balance of sweetness.
  • Fruit Spread: Adds fruity flavor and sweetness to the cheesecake, complementing the fresh strawberries.
  • Strawberries: Provide vibrant color, juicy texture, and natural sweetness to the dessert, both in the filling and as a garnish.

How To Make It:

  1. Prepare Crust: Crush the shortbread cookies and mix them with melted butter. Press the mixture onto the bottom of a springform cake pan.
  2. Layer Strawberries: Slice some strawberries and line them upright along the sides of the crust.
  3. Prepare Filling: Blend cream cheese, heavy whipping cream, vanilla bean paste, and half of the confectioner’s sugar until smooth. In another bowl, beat sour cream with the remaining confectioner’s sugar.
  4. Assemble Cheesecake: Spread a layer of the cheesecake mixture over the crust in the springform pan. Add a layer of fruit spread, sliced strawberries, and reserved cookie crumbs. Top with the whipped sour cream.
  5. Garnish: Sprinkle additional cookie crumbs on top and arrange sliced strawberries in a decorative pattern.

Recipe Tips:

  • Ensure the cream cheese is softened at room temperature before blending to avoid lumps in the filling.
  • For best results, chill the cheesecake in the refrigerator for several hours or overnight before serving to allow it to set properly.
  • Customize the cheesecake by using different types of fruit spreads or fresh fruits according to your preference.
  • Serve slices of the cheesecake with additional fresh strawberries and a dollop of whipped cream for an extra indulgent treat.
