This Strawberry Cheesecake Dip is a creamy and decadent treat that brings all the flavors of a classic strawberry cheesecake into a fun, shareable dip. Ingredients:

  • Whipped Cream:
  • 1 cup heavy cream
  • 1/3 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • Cream Cheese Mixture:
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup mashed strawberries (about 3/4 cup whole strawberries)
  • 3/4 cup diced strawberries
  • For Serving:
  • Graham crackers for dipping

Instructions:

  1. Prepare the Whipped Cream:
  • Start by making the whipped cream. In a chilled mixing bowl, add the heavy cream and 1/3 cup powdered sugar. Mix on high speed for 1-2 minutes. Add the vanilla extract and continue to beat for another 1-2 minutes, or until soft peaks form. This will yield about 2 cups of whipped cream. Set it aside.
  1. Make the Cream Cheese Base:
  • In a separate large bowl, cream together the softened cream cheese and 1 cup powdered sugar until the mixture is smooth and creamy.
  1. Add the Strawberries:
  • Mash about 3/4 cup of whole strawberries to yield 1/2 cup of mashed strawberries (be sure not to include the excess juice). Blend the mashed strawberries into the cream cheese mixture.
  1. Fold in the Whipped Cream:
  • Gently fold the prepared whipped cream into the cream cheese and strawberry mixture until well combined. Then, fold in the 3/4 cup of diced strawberries for added texture and bursts of fresh strawberry flavor.
  1. Serve:
  • Transfer the dip to a serving bowl and serve with graham crackers for dipping. The graham crackers mimic the classic cheesecake crust, making each bite taste like a spoonful of strawberry cheesecake.
