Strawberry Cheesecake Biscuit Waffles

Strawberry Cheesecake Biscuit Waffles are a delightful fusion of breakfast and dessert, perfect for when you want to indulge in something sweet and unique. These waffles feature tender Pillsbury biscuits stuffed with a zesty lemon cream cheese filling and fresh strawberries, all cooked to golden perfection in a waffle iron. Topped with a luscious homemade strawberry sauce and more lemon cream cheese, these biscuit waffles are a treat that’s sure to impress at brunch or as a special dessert.

Ingredients:

  • 2 cups strawberries, divided, hulled, and coarsely chopped
  • 1 tablespoon sugar

For the Lemon Cream Cheese:

  • 1 (8 oz) package cream cheese, softened
  • 1/4 cup sugar
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice

For the Waffles:

  • 1 (7.5 oz) package Pillsbury refrigerated biscuits (10-count)

Instructions:

1. Make the Strawberry Sauce:

  • In a small bowl, combine 1 cup of the chopped strawberries with 1 tablespoon of sugar. Use a fork or potato masher to mash the strawberries until they release their juices and form a chunky sauce. Cover and chill in the fridge until ready to serve.

2. Prepare the Lemon Cream Cheese:

  • In a mixing bowl, beat together the softened cream cheese, 1/4 cup sugar, lemon zest, and lemon juice until smooth and creamy. Set aside.

3. Assemble the Biscuit Waffles:

  • Preheat your waffle iron to medium-high heat.
  • Flatten each biscuit in the palm of your hand to create a thin disk. Place about 1 tablespoon of the lemon cream cheese mixture in the center of one flattened biscuit, add a few pieces of the remaining chopped strawberries on top, and cover with another flattened biscuit. Lightly press and seal the edges to enclose the filling.
  • Place the filled biscuit sandwich in the preheated waffle iron and cook until the biscuit is golden brown and cooked through, about 3-5 minutes. Depending on the size of your waffle iron, you may be able to cook multiple biscuit waffles at once.

4. Serve:

  • Once the biscuit waffles are cooked, top them with a dollop of the remaining lemon cream cheese mixture and drizzle with the chilled strawberry sauce. Garnish with any extra fresh strawberries if desired.
