This Steam Custard Cake with Starfruit Garnish is a unique and delightful dessert that combines the light and airy texture of a steamed cake with the exotic flavors of starfruit and citrusy lime zest. The agave syrup adds a subtle sweetness and glossy finish to the cake.

The starfruit garnish not only enhances the visual appeal of the cake but also provides a juicy and refreshing contrast to the tender crumb. The steaming process ensures a moist and tender texture, making each bite a delightful experience.

Steam Custard Cake with Starfruit Garnish

Ingredients:

For Garnish:

  • 2 not overripe starfruit
  • 20 cl agave syrup
  • 30 g butter

For the Cake:

  • 300 g flour
  • 200 g caster sugar
  • 1 packet yeast
  • 4 eggs
  • Zest of 2 limes
  • 10 cl milk
  • 200 g softened butter, plus extra for greasing the mold

How to Make:

  1. Prepare the Mold:
  • Grease a charlotte mold with butter and pour in agave syrup, distributing it on the walls by rotating the mold.
  1. Garnish with Starfruit:
  • Thinly slice the starfruit and arrange them in the bottom of the mold.
  1. Prepare the Cake Batter:
  • In a bowl, whisk together softened butter and sugar until frothy. Add eggs one at a time, followed by milk, and stir in the lime zest.
  • Sift together flour and yeast, then add the mixture to the prepared batter. Mix well with a spatula.
  1. Pour into Mold:
  • Pour the cake batter into the prepared mold.
  • Cover the mold with one or two sheets of baking paper, securing it with kitchen string or a rubber band.
  1. Steam the Cake:
  • Place the mold in a steamer and steam for about 90 minutes, checking the water level regularly. Alternatively, steam for 50 minutes in a pressure cooker.
  1. Rest and Unmold:
  • Allow the cake to rest for 5 minutes before opening. Carefully turn it out onto a serving platter.
  1. Drizzle with Agave Syrup:
  • Drizzle the cake with the remaining agave syrup from the bottom of the baking dish.

Tips:

  1. Steam Carefully: When steaming the cake, be vigilant about checking the water level, especially in longer steaming processes. Ensure a consistent and gentle steam throughout.
  2. Starfruit Selection: Choose not overripe starfruit for the garnish to balance the sweetness and tartness.
  3. Resting Period: Allow the cake to rest before unmolding to maintain its structure and prevent breakage.
  4. Serve Chilled: For a refreshing touch, you can serve the cake chilled, especially on warm days.
