Ingredients:
For the Shrimp Scampi:
- ½ lb. linguine
- 2 Tbsp unsalted butter
- 2 Tbsp olive oil
- 1 Tbsp minced garlic
- ¼ tsp red pepper flakes
- ½ lb. jumbo shrimp, peeled and deveined
- ⅛ tsp salt
- ⅛ tsp pepper
- ⅓ cup white wine or chicken broth
- 3 Tbsp lemon juice
- 3 Tbsp finely chopped parsley, plus more for garnish
For the Garlic Butter Steak:
- Your preferred steak cuts
- Salt and pepper, to taste
- Olive oil, for brushing
- 2 Tbsp unsalted butter, softened
- 1 tsp minced garlic
How To Make Garlic Butter Steak and Shrimp Scampi:
- Prepare Linguine: Cook linguine in a large pot of salted boiling water until al dente, about 7 minutes. Drain well.
- Cook Shrimp Scampi: In a large skillet over medium heat, melt butter and olive oil. Add minced garlic and red pepper flakes, cooking for 1 minute. Add shrimp, salt, and pepper, cooking until shrimp are pink and cooked through, about 5 minutes. Remove shrimp and set aside.
- Make Sauce: Stir in white wine (or chicken broth) and lemon juice, cooking for 1 minute. Remove skillet from heat and stir in chopped parsley. Add cooked linguine and shrimp back to the skillet, tossing to coat in the sauce.
- Prepare Garlic Butter Steak: Season steak with salt and pepper. Heat a large cast-iron pan over high heat and lightly brush steak with olive oil. Cook steak for 3-4 minutes on each side, or until desired doneness. While steak cooks, mix softened butter and minced garlic in a small bowl.
- Serve: Top steak with garlic butter and let it rest for 5 minutes before slicing against the grain. Divide shrimp scampi linguine between plates or bowls, garnishing with additional chopped parsley.
Tips:
- For best results, use fresh shrimp and high-quality steak cuts.
- Adjust the amount of red pepper flakes according to your preferred level of spiciness.
- Don’t overcrowd the skillet when cooking the shrimp to ensure even cooking.
- Let the steak rest after cooking to allow the juices to redistribute, resulting in a more tender and flavorful steak.
