Southern Potato Salad is a beloved classic featuring tender potatoes mixed with a creamy dressing of mayo, mustard, and spices. Enhanced with crunchy veggies, eggs, and a hint of sweetness, it’s a soulful side dish that captures the essence of Southern comfort. Perfect for picnics, barbecues, or any family gathering, this timeless recipe embodies the heartwarming flavors of the South.

Southern Potato Salad

Ingredients:

  • 3 pounds medium Russet potatoes
  • 1 cup mayonnaise
  • 1/4 cup yellow mustard
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons sugar
  • 1/2 teaspoon onion powder
  • 1/4 cup sweet pickle relish
  • 1 stalk celery, chopped
  • 1/2 sweet onion, chopped
  • 4 hard-boiled eggs (3 chopped and 1 sliced)
  • Paprika
  • Salt and pepper to taste

How To Make Southern Potato Salad:

  1. Begin by cutting each Russet potato in half, then place them in a large pot and cover with 1 inch of water.
  2. Add 2 teaspoons of salt to the pot and bring it to a simmer. Allow the potatoes to simmer for about 20 minutes or until they are fork-tender all the way through. Drain the potatoes well.
  3. Once drained, let the potatoes cool and then peel and discard the skins.
  4. In a large bowl, place the potatoes and use a knife to cut them into bite-sized pieces.
  5. In a small bowl, mix together mayonnaise, yellow mustard, apple cider vinegar, sugar, and onion powder. Pour this flavorful mixture over the potatoes and mix well.
  6. Add the sweet pickle relish, chopped celery, chopped onion, and the 3 chopped hard-boiled eggs to the bowl. Mix everything thoroughly. Season with salt and pepper to taste.
  7. Top the potato salad with sliced hard-boiled eggs and sprinkle with paprika for a touch of color.
  8. Cover the bowl with plastic wrap and refrigerate for at least 4 hours to allow the flavors to meld and the salad to chill.

Description and Tips:

Indulge in the classic charm of Southern Potato Salad, a delightful blend of creamy textures and savory flavors. This timeless side dish is perfect for picnics, barbecues, or any gathering that calls for comfort food.

Tips:

  • Selecting Russet potatoes ensures a fluffy texture in the salad. Ensure they are cooked to fork-tender perfection to enhance the overall mouthfeel.
  • Allowing the potato salad to chill for at least 4 hours in the refrigerator intensifies the flavors and contributes to a more cohesive and delicious dish.
  • The combination of sweet pickle relish, celery, and sweet onion adds layers of crunch and sweetness, creating a well-balanced and satisfying potato salad.
  • Adjust the salt and pepper according to your taste preferences. Remember, it’s always easier to add more later than to correct an overly seasoned dish.
  • The addition of sliced hard-boiled eggs on top not only enhances the visual appeal but also adds a rich and creamy element to each bite. Sprinkling paprika provides a hint of smokiness and color to finish off this Southern classic. Enjoy the vibrant flavors and textures of this beloved potato salad!
