Ingredients:

  • 4 cups diced cooked chicken
  • 1 can cream of chicken soup
  • 8 oz. (1 cup) sour cream
  • 2/3 cup milk
  • 1 (4 oz.) can diced green chiles
  • 2 tablespoons dried minced onion
  • 1 teaspoon garlic powder
  • Pepper to taste
  • 12 corn tortillas
  • 2-3 cups shredded sharp cheddar cheese

How To Make Sour Cream Chicken Enchilada Casserole:

  1. Prepare the Oven and Dish:
  • Preheat the oven to 350 degrees Fahrenheit.
  • Spray a 13×9 inch baking dish with cooking spray to prevent sticking.
  1. Prepare the Sauce:
  • In a large bowl, combine the cream of chicken soup, sour cream, milk, diced green chiles, dried minced onion, garlic powder, and pepper. Mix until well combined.
  1. Assemble the Casserole:
  • Line the bottom of the prepared baking dish with 6 corn tortillas.
  • Sprinkle half of the diced chicken over the tortillas.
  • Pour half of the sauce mixture over the chicken, spreading it evenly to cover.
  • Sprinkle half of the shredded cheddar cheese over the sauce layer.
  1. Repeat the Layers:
  • Repeat the layering process with the remaining tortillas, diced chicken, sauce mixture, and shredded cheddar cheese.
  1. Bake the Casserole:
  • Place the assembled casserole in the preheated oven and bake for 30-40 minutes, or until the casserole is hot and bubbly, and the cheese is melted and golden brown.
  1. Let it Rest:
  • Remove the casserole from the oven and let it stand for 10-15 minutes before serving. This allows the flavors to meld together and makes it easier to slice and serve.

Tips:

  • You can use leftover cooked chicken or rotisserie chicken to save time when preparing this dish.
