Sour Cream Chicken Enchilada Casserole

This Sour Cream Chicken Enchilada Casserole is a comforting and easy-to-make dish that brings together tender chicken, creamy sauce, and layers of cheesy goodness. It’s perfect for weeknight dinners or a cozy family gathering. The combination of sour cream, green chiles, and cheddar cheese makes it both creamy and flavorful, while the corn tortillas add a pleasant texture.


Ingredients:

  • 4 cups diced cooked chicken
  • 1 can cream of chicken soup
  • 8 oz. (1 cup) sour cream
  • 2/3 cup milk
  • 1 (4 oz.) can diced green chiles (or fresh)
  • 2 Tbsp. dried minced onion
  • 1 tsp. garlic powder
  • Pepper, salt to taste
  • 12 corn tortillas
  • 2-3 cups shredded cheddar cheese

Instructions:

  1. Preheat and Prepare
    Preheat your oven to 350°F and lightly grease a baking dish.
  2. Prepare the Sauce
    In a large bowl, combine the cream of chicken soup, sour cream, milk, green chiles, minced onion, garlic powder, and black pepper. Mix everything together until smooth.
  3. Layering the Casserole
    In the greased baking dish, create the first layer by placing 6 corn tortillas. Top with 3 cups of diced chicken, followed by half of the creamy sauce mixture, and sprinkle with half of the shredded cheddar cheese. Repeat the layering: tortillas, chicken, sauce, and finish with the remaining cheese on top.
  4. Bake
    Place the casserole in the preheated oven and bake for 30-40 minutes until the cheese is melted, bubbly, and golden brown on top.
  5. Serve
    Let the casserole cool for about 5 minutes before slicing and serving.

Tips:

  • Add Extra Veggies: For a heartier casserole, you can add sautéed onions, bell peppers, or even black beans in between the layers.
  • Corn Tortillas: Be sure to use corn tortillas as they hold up better in casseroles and add a unique flavor. If they’re stiff, you can quickly warm them in a dry pan to make them more pliable.
  • Customizing the Heat: Adjust the spice level by adding more or less green chiles. You can also add a few dashes of hot sauce to the sauce mixture for extra heat.
  • Leftovers: This casserole reheats well and is great for meal prep. Store leftovers in an airtight container in the fridge for up to 3 days.
