In a large bowl, combine the cream of chicken soup, sour cream, milk, green chiles, minced onion, garlic powder, and black pepper. Mix everything together until smooth. - Layering the Casserole
In the greased baking dish, create the first layer by placing 6 corn tortillas. Top with 3 cups of diced chicken, followed by half of the creamy sauce mixture, and sprinkle with half of the shredded cheddar cheese. Repeat the layering: tortillas, chicken, sauce, and finish with the remaining cheese on top. - Bake
Place the casserole in the preheated oven and bake for 30-40 minutes until the cheese is melted, bubbly, and golden brown on top. - Serve
Let the casserole cool for about 5 minutes before slicing and serving.
Tips:
- Add Extra Veggies: For a heartier casserole, you can add sautéed onions, bell peppers, or even black beans in between the layers.
- Corn Tortillas: Be sure to use corn tortillas as they hold up better in casseroles and add a unique flavor. If they’re stiff, you can quickly warm them in a dry pan to make them more pliable.
- Customizing the Heat: Adjust the spice level by adding more or less green chiles. You can also add a few dashes of hot sauce to the sauce mixture for extra heat.
- Leftovers: This casserole reheats well and is great for meal prep. Store leftovers in an airtight container in the fridge for up to 3 days.
This easy-to-assemble casserole is a comforting dish that combines creamy and cheesy layers, making it a family favorite that’s sure to satisfy.
