S’mores Ice Cream Sandwiches

Indulge in the nostalgic flavors of summer with these delightful S’mores Ice Cream Sandwiches. This recipe takes the classic campfire treat to a whole new level by combining creamy chocolate pudding, fluffy marshmallow cream, and Cool Whip sandwiched between graham crackers. Perfect for beating the summer heat, these ice cream sandwiches are a fun and easy-to-make dessert that both kids and adults will adore. Whether you’re enjoying them at a backyard barbecue or as a sweet treat after a long day, these S’mores Ice Cream Sandwiches are sure to be a hit.

Ingredients:

  • 32 Graham cracker squares
  • 1 Large box of instant chocolate pudding (6 servings)
  • 2 ½ cups Milk
  • 7 oz Marshmallow creme
  • 8 oz Container of thawed Cool Whip
  • 4 oz Softened cream cheese

Instructions:

  1. Prepare Chocolate Pudding: In a large mixing bowl, whisk together the instant chocolate pudding and milk until smooth. Allow it to set for 5 minutes.
  2. Line Baking Dish: Line the bottom of a 9×13 baking dish with aluminum foil or parchment paper.
  3. Layer Chocolate Pudding: Spread the prepared chocolate pudding evenly in the bottom of the lined baking dish.
  4. Prepare Marshmallow Cream Mixture: In another mixing bowl, beat together the cream cheese and marshmallow creme until creamy and well combined.
  5. Fold in Cool Whip: Gently fold the thawed Cool Whip into the cream cheese and marshmallow mixture until fully incorporated.
  6. Layer Mixture: Spread the marshmallow cream mixture evenly over the chocolate pudding layer in the baking dish.
  7. Freeze: Place the baking dish in the freezer and let it set for a minimum of 6 hours or until firm.
  8. Slice and Assemble: Once set, slice the mixture into 16 squares. Sandwich each square between two graham cracker squares.
  9. Serve: Serve the S’mores Ice Cream Sandwiches immediately and enjoy the delicious combination of flavors and textures.

Tips:

  • For easier removal from the baking dish, lift the frozen mixture out using the aluminum foil or parchment paper lining.
  • Customize your ice cream sandwiches by adding crushed graham crackers or mini chocolate chips to the marshmallow cream mixture for extra texture and flavor.
