Slow Cooker Barbequed Beef Ribs Recipe

Ingredients:

  • Beef: 4 ribs on the bone (individually sliced)
  • Onions: 2 large (cut into feathers)
  • Garlic: 10 cloves (peeled and crushed)
  • Mustard: 2 tablespoons (preferably Dijon mustard)
  • Beef stock: 1 liter (low-fat if possible, reduced to 1/2 liter)
  • Beer: 1/2 liter
  • Bay leaves: 2
  • Black peppercorns: 20 (crushed)
  • Salt: 1 teaspoon
  • Flour: 1/2 cup
  • Cornstarch: 2 tablespoons
  • Olive oil
  • Salt and ground black pepper

Instructions:

  1. Prepare the Meat Broth:
  • Reduce 1 liter of beef stock over high heat with crushed peppercorns and bay leaves until it reduces to 1/2 liter.
  • Dissolve mustard in the reduced broth and set aside.
  1. Prepare the Ribs:
  • Cut the ribs individually, season with salt and pepper, and lightly flour them.
  • In a frying pan with oil, cook the ribs until they get some color. Place them on absorbent paper to remove excess oil.
  1. Sauté Vegetables:
  • In the same frying pan, sauté the onions and garlic until they start to brown. Season with salt and pepper.
  1. Prepare Vegetable Base:
  • Add the leftover flour from the ribs’ breading and a dash of water to the frying pan. Cook for 2-3 minutes.
  1. Combine Ingredients in the Slow Cooker:
  • Cover the bottom of the slow cooker with sautéed onions.
  • Arrange the sealed ribs with the bone upwards.
  • Pour the reduced broth and add enough beer to reach the bone.
  1. Slow Cook the Ribs:
  • Cover the slow cooker and cook on low power for 5 hours and 30 minutes. Check at 5 hours and every 30 minutes until the ribs are tender.
  • Let the ribs rest in the slow cooker covered for 120 minutes on the warm setting.
  1. Final Sauce Preparation:
  • Dissolve cornstarch in water and add it to the slow cooker.
  • Cook the sauce on high power for half an hour, checking and correcting salt levels.
  1. Serve:
  • Transfer the ribs to a casserole or serving dish. Remove excess fat that solidifies on the surface.
  • Finish the sauce by removing the bay leaves and whisking it for a thinner consistency.
