Skinny Chicken Broccoli Casserole is a lighter take on the classic comfort food dish, offering all the creamy goodness without the excess calories. Packed with tender chicken, nutritious broccoli, and a flavorful sauce, this casserole is a satisfying and wholesome meal that the whole family will enjoy. Topped with a crispy breadcrumb and cheese topping, it’s a deliciously satisfying dish that’s perfect for busy weeknights or casual gatherings.

Ingredients:

  • Cooked Chicken Breasts: Boneless, skinless chicken breasts add protein and flavor to the casserole.
  • Frozen Broccoli Cuts: Convenient and nutritious, frozen broccoli cuts provide texture and color to the dish.
  • Cream of Chicken Soup: Adds creaminess and flavor to the casserole base.
  • Non-Fat Evaporated Milk: Provides creaminess without the extra fat.
  • Lemon Juice: Adds a touch of brightness and acidity to balance the flavors.
  • Reduced Fat Shredded Cheddar Cheese: Adds cheesy goodness with less fat.

Instructions:

  1. Preheat the oven to 350°F and grease a 9×13-inch baking pan with cooking spray.

  8. Bake the casserole, uncovered, in the preheated oven for 25 to 30 minutes, or until bubbly and the topping is golden brown.
