This Simple Green Salad is a refreshing and vibrant dish that pairs well with almost any main course or can be enjoyed on its own for a light meal. With crisp mixed greens, fresh dill, and a hint of sweetness from a touch of sugar, each bite brings a balance of flavors. The homemade lemon dressing adds a zesty, tangy finish, making this salad perfect for both casual lunches and elegant dinners.

Ingredients

For the Salad:

  • 8 cups mixed greens (such as butter or red leaf lettuce)
  • ⅓ cup chopped fresh dill
  • ½ English cucumber, thinly sliced
  • ¼ sweet white onion, thinly sliced (or substitute with 3 green onions or red onion)

For the Lemon Dressing:

  • 3 tbsp light-flavored olive oil (or vegetable oil)
  • 1 tbsp white vinegar
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp granulated sugar
  • ¼ tsp salt, plus more to taste
  • ¼ tsp black pepper, plus more to taste

Instructions

  1. Prepare the Dressing:
  • In a mason jar or small bowl, combine olive oil, white vinegar, lemon juice, Dijon mustard, sugar, salt, and pepper. Shake or whisk vigorously until well blended. Adjust salt and pepper to taste.
  1. Assemble the Salad:
  • In a large salad bowl, combine mixed greens, chopped dill, cucumber, and onion.
  1. Dress and Serve:
  • Drizzle the lemon dressing over the salad and toss until evenly coated. Serve immediately for the freshest taste.

Tips for the Best Simple Green Salad

  • Keep it Crisp: Make sure the greens are dry before assembling. Pat them with a paper towel or use a salad spinner to remove excess moisture, helping the dressing adhere better.
  • Dressing Alternatives: Customize the dressing by swapping white vinegar with apple cider vinegar or balsamic for a slightly different flavor.
  • Add-Ins: For a heartier salad, consider adding sliced avocado, cherry tomatoes, or even toasted nuts for extra texture and flavor.

This Simple Green Salad is a versatile and easy-to-make side dish that brings a fresh burst of flavor to any table!
