These Easy Chicken Fajitas make for a quick, vibrant, and delicious meal bursting with flavor. Marinated in a mix of lime juice, chili powder, and smoked paprika, the chicken has a smoky, zesty taste, balanced by the sweetness of sautéed peppers and onions. Serve with warm tortillas for a classic Tex-Mex dish that’s great for weeknight dinners or casual gatherings.


Ingredients

  • 3 boneless, skinless chicken breasts (sliced into thin strips)
  • 1 medium onion (cut into slivers)
  • 1 lime (juice divided)
  • 3 bell peppers (use red, yellow, green, or orange, sliced)
  • 3 tablespoons olive oil, divided
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon cumin (optional, for extra warmth)
  • Salt, to taste

Instructions

  1. Prepare the Ingredients
  • Cut the onion into thin slivers and slice the bell peppers into strips. Set aside.
  • In a large bowl, combine 1 tablespoon of olive oil, the juice of ½ lime, chili powder, smoked paprika, onion powder, black pepper, cumin, and salt. Toss the sliced chicken in this marinade, ensuring all pieces are coated evenly.
  1. Cook the Chicken
  • Heat 1 tablespoon of olive oil over medium-high heat in a large skillet. Add half of the marinated chicken strips and cook for 3-5 minutes, stirring occasionally, until just cooked through. Remove from the skillet and set aside. Repeat with the remaining chicken.
  1. Sauté the Vegetables
  • In the same skillet, add the remaining tablespoon of olive oil. Add the onion and cook for about 2 minutes, or until it starts to soften. Add the sliced bell peppers and cook for an additional 2 minutes, just until they’re hot but still slightly crisp.
  1. Combine and Serve
  • Add the cooked chicken back into the skillet, stirring to combine with the onions and peppers. Squeeze the remaining lime juice over the fajitas.
  • Serve hot with tortillas and your favorite toppings, such as sour cream, guacamole, or shredded cheese.
