Shrimp Fried Rice

Shrimp Fried Rice is a quick and flavorful dish that brings together tender shrimp, fluffy white rice, and colorful vegetables, all seasoned with soy sauce and sesame oil. This easy recipe is perfect for a weeknight dinner or a delicious side dish.

Ingredients:

  • 1 tbsp. oil
  • 1 tbsp. minced garlic
  • 1 lb. medium shrimp, peeled and deveined
  • 3 cups cooked white rice
  • 2 cups frozen peas and carrots, defrosted
  • 2 tbsp. soy sauce
  • 2 tsp. sesame oil
  • 1 large egg, whisked
  • 2 tbsp. sliced green onions

Instructions:

  1. Prepare the Ingredients:
  • Wash and rinse the shrimp, then set them aside.
  • Cook the white rice according to the package instructions and set it aside.
  1. Sauté Garlic and Shrimp:
  • Heat a medium skillet over medium heat. Add the oil and minced garlic, and sauté for about 1 minute until the garlic is fragrant.
  • Add the defrosted peas and carrots along with the shrimp to the skillet. Toss to combine and cook for about 5 minutes until the shrimp are pink and opaque.
  1. Add Rice and Seasonings:
  • In a small bowl, mix together the soy sauce and sesame oil.
  • Stir the cooked white rice into the skillet with the shrimp and vegetables. Pour the soy sauce and sesame oil mixture over the rice and stir well to combine. Sauté for about 4 minutes.
  1. Cook the Egg:
  • Push the rice and shrimp mixture to one side of the skillet. Add the whisked egg to the empty side of the skillet and stir constantly until the egg is almost fully cooked. Then, fold the cooked egg into the rice mixture.
  1. Garnish and Serve:
  • Garnish the shrimp fried rice with sliced green onions.
  • Serve immediately and enjoy!
