Shrimp Cocktail Recipe

This classic shrimp cocktail combines fresh shrimp with a zesty, creamy sauce, making it a perfect appetizer for any occasion. The flavors of lemon, parsley, and a hint of hot sauce elevate this dish to a refreshing and sophisticated level.

Ingredients:

  • 1 ½ pounds large shrimp, peeled and cleaned
  • ½ cup lemon juice, divided
  • ¼ cup finely chopped onion
  • ¼ cup chopped fresh parsley, plus extra for garnish
  • ½ teaspoon salt
  • Freshly ground pepper to taste
  • ½ cup mayonnaise
  • ½ cup tomato sauce
  • ½ teaspoon hot sauce (optional)
  • Olive oil for garnish

Instructions:

  1. Marinate the Shrimp:
  • Place the shrimp in a medium bowl and add ⅓ cup of lemon juice.
  • Refrigerate for 30 minutes to let the shrimp absorb the lemon flavor.
  • After marinating, drain the shrimp and discard the lemon juice.
  1. Cook the Shrimp:
  • In a medium saucepan over medium-high heat, bring water to a boil and add the salt.
  • Once the water starts to boil, add the shrimp and immediately turn off the heat.
  • Let the shrimp sit in the hot water until they are cooked through, about 3 to 5 minutes.
  • Remove the shrimp and transfer to a plastic container, then refrigerate until completely chilled.
  1. Prepare the Sauce:
  • In a small bowl, combine the chopped onion, remaining lemon juice, ketchup, mayonnaise, freshly ground pepper, hot sauce (if using), and chopped parsley. Mix well until all ingredients are thoroughly combined.
  1. Assemble the Shrimp Cocktail:
  • Add the chilled shrimp to the sauce mixture and gently toss to coat.
  • Serve the shrimp cocktail in glass bowls, optionally over a bed of lettuce.
  • Drizzle with a little olive oil and garnish with additional chopped parsley for a touch of color and flavor.
  1. Serve:
  • Serve immediately with crackers on the side for a delightful appetizer.

Tips:

  • Lemon Juice: Fresh lemon juice enhances the flavor of the shrimp and sauce. Avoid bottled lemon juice if possible.
  • Chilling Shrimp: Properly chilling the shrimp before serving ensures a refreshing, crisp texture.
  • Hot Sauce: Adjust the amount of hot sauce to your preference for a mild or spicy kick.
  • Serving: For an elegant presentation, serve in martini glasses or small, decorative bowls.
