Shrimp and Spinach Alfredo is a luxurious yet straightforward pasta dish that combines succulent shrimp, vibrant spinach, and a creamy Alfredo sauce. This recipe bursts with flavor from the garlic, Creole seasoning, and Old Bay seasoning, creating a dish that’s both comforting and satisfying.The process begins with sautéing or baking seasoned chicken pieces until they are perfectly cooked and flavorful. Meanwhile, fresh spinach is quickly wilted in olive oil with garlic, adding a vibrant green element to the dish. The shrimp are then cooked briefly until they turn pink and opaque, ensuring they remain tender and juicy.

The creamy Alfredo sauce is the star of the show, made by melting butter and sautéing garlic until fragrant. Heavy whipping cream is then added, along with a generous amount of freshly grated Parmesan/Romano cheese, creating a rich and velvety sauce. Seasoned with Creole and Old Bay seasoning, the sauce simmers to perfection, allowing the flavors to meld together beautifully.

Once the pasta is cooked al dente, it’s tossed with the sautéed spinach, cooked shrimp, and the luscious Alfredo sauce. The dish is garnished with fresh parsley for a pop of color and freshness.

Ingredients:

  • Spinach
  • Chicken breasts
  • Raw shrimp
  • Heavy whipping cream
  • Garlic
  • Creole seasoning
  • Old Bay Garlic & Herb seasoning
  • Fresh grated Parmesan/Romano cheese
  • Olive oil
  • Penne pasta noodles
  • Butter
  • Parsley

Instructions:

  1. Cook the chicken pieces seasoned with Old Bay and Creole seasoning until fully cooked and flavorful.
  2. Sauté the spinach in olive oil with chopped garlic until wilted, then set aside.
  3. Cook the raw shrimp in olive oil with chopped garlic for 2 minutes on each side, then set aside.
  4. Boil the penne pasta noodles until al dente, about 10-12 minutes.
  5. For the sauce, sauté chopped garlic in butter until fragrant, then add heavy whipping cream and stir. Add grated Parmesan/Romano cheese and stir until melted. Season with Creole and Old Bay seasoning, then simmer the sauce on low for 5 minutes.
  6. Combine all cooked ingredients with the cooked pasta, then pour the sauce on top. Garnish with fresh parsley before serving.

Tips:

  • Be careful not to overcook the shrimp, as they can become tough and rubbery.
  • Adjust the seasoning according to your taste preferences, adding more or less Creole and Old Bay seasoning as desired.
  • Serve the dish immediately to enjoy it at its best, as the sauce may thicken upon standing.
