Seven-Minute Frosting is a classic, light, and fluffy frosting known for its delicate texture and sweet taste. The process involves creating a double boiler by placing the mixing bowl over simmering water, allowing the ingredients to cook and thicken. The result is a glossy, meringue-like frosting that beautifully complements various cakes and desserts.

Seven-Minute Frosting

Ingredients:

  • Sugar: 1 1/2 cups
  • Cold water: 1/3 cup
  • Egg whites: 2
  • Cream of tartar: 1/2 teaspoon
  • Pinch of salt
  • Vanilla extract: 1 teaspoon

How to Make:

  1. In a medium glass bowl, combine sugar, water, egg whites, cream of tartar, and a pinch of salt.
  2. Set a saucepan of water on the stove to come to a simmer.
  3. With an electric mixer on low, beat the egg mixture for about 30 seconds.
  4. Immediately set the bowl over the simmering pan of water, forming a double boiler. Beat constantly on high until the mixture becomes stiff and glossy, which takes about 7 minutes.
  5. Remove the bowl from heat, add vanilla extract, and beat for an additional 1 to 2 minutes.
  6. Use the frosting directly, as it sets quickly.

Tips:

  1. Consistent Beating: Ensure you beat the egg mixture constantly and consistently to achieve the desired stiffness and glossiness in the frosting.
  2. Simmering Water: Be cautious not to let the simmering water touch the bottom of the mixing bowl to avoid overheating the frosting.
  3. Swift Application: Seven-Minute Frosting sets quickly, so it’s recommended to use it immediately after preparation.
  4. Versatile Usage: This frosting pairs well with a variety of cakes, cupcakes, and desserts, adding a light and sweet touch to your creations.
  5. Flavor Variations: While vanilla extract is commonly used, you can experiment with other flavor extracts, such as almond or citrus, to add a unique twist to the frosting.
