Saltine Cracker Toffee

Saltine Cracker Toffee, also known as “Christmas Crack,” is an irresistible treat that’s both easy and quick to make. This delightful confection combines the crunchy saltiness of saltine crackers with a rich, buttery toffee layer, topped with smooth, melted chocolate. The optional addition of chopped pecans adds a delightful nutty crunch, making it a perfect snack for holidays, parties, or any time you crave something sweet and salty.

Ingredients

  • 40 salted saltine crackers (or enough to line your pan)
  • 1 cup unsalted butter
  • 1 cup packed brown sugar
  • 2 cups milk chocolate or semisweet chocolate chips
  • (Optional) 3/4 cup chopped pecans

Instructions

  1. Preheat and Prepare:
  • Preheat your oven to 400°F (200°C).
  • Line a cookie sheet with at least a 1/2 inch edge or a jelly roll pan with parchment paper.
  • Arrange the saltine crackers in a single layer on the prepared cookie sheet, covering the entire surface.
  1. Make the Toffee:
  • In a small pot, combine the butter and brown sugar. Bring the mixture to a boil over medium heat, stirring frequently.
  • Once the mixture reaches a rolling boil, continue to boil for 3 minutes without stirring. The mixture should turn a deep caramel color.
  1. Pour and Bake:
  • Immediately pour the hot toffee mixture over the saltine crackers, spreading it evenly to cover all the crackers.
  • Bake in the preheated oven for 5 to 6 minutes, until the toffee is bubbly and the crackers appear to float.
  1. Add the Chocolate:
  • Remove the pan from the oven. If any crackers have shifted, straighten them carefully.
  • Sprinkle the chocolate chips evenly over the top of the hot toffee. Let them sit for a few minutes to melt. If the chocolate chips do not melt completely, you can place the pan back in the oven for an additional 1-2 minutes.
  • Alternatively, you can melt the chocolate chips in the microwave for about 1 minute, then spread the melted chocolate over the toffee layer.
  1. Optional Topping:
  • If desired, sprinkle chopped pecans over the melted chocolate, pressing them lightly into the chocolate to adhere.
  1. Cool and Serve:
  • Allow the toffee to cool completely at room temperature. To speed up the cooling process, you can place the pan in the refrigerator for a few minutes.
  • Once fully set, break the toffee into pieces and enjoy.

Tips

  • Parchment Paper: Lining the pan with parchment paper makes it much easier to remove the toffee once it has cooled and set.
  • Uniform Cracker Layer: Ensure the crackers are evenly arranged and close together, as this will help the toffee layer distribute evenly.
  • Stirring Toffee: Avoid stirring the toffee mixture once it has started boiling to prevent crystallization, which can result in a grainy texture.
  • Storage: Store the cooled and broken toffee pieces in an airtight container at room temperature for up to a week. For longer storage, keep them in the refrigerator.
