Salisbury Steak is a classic comfort dish featuring seasoned ground beef patties smothered in a rich and savory mushroom and onion gravy. This hearty meal is perfect for a cozy dinner and pairs wonderfully with mashed potatoes or steamed vegetables. The combination of tender beef and flavorful gravy makes it a family favorite that’s sure to satisfy.

Tips:

  1. Meat Mixture: Ensure the ground beef mixture is well-combined but not overworked to keep the patties tender.
  2. Onions: Using half of the onion in the meat mixture and the other half in the gravy creates a cohesive flavor throughout the dish.
  3. Gravy: For a thicker gravy, let it simmer a bit longer to reduce or add a slurry of cornstarch and water if needed.
  4. Serving: Salisbury Steak pairs well with mashed potatoes, egg noodles, or rice to soak up the delicious gravy.

Ingredients:

Meat Mixture:

  • 1 lb lean ground beef
  • 1 medium yellow onion, divided
  • 1/3 cup panko breadcrumbs
  • 1 large egg
  • 2 teaspoons ketchup
  • 1 teaspoon Dijon mustard
  • 1 teaspoon coarse kosher salt (use less if using fine salt)
  • Dash of Worcestershire sauce
  • 2 tablespoons olive oil

Gravy:

  • Remainder of onion from above, sliced
  • 8 ounces sliced white mushrooms
  • 1 teaspoon minced garlic
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups low-sodium beef broth (recommend Better than Bouillon Base)
  • 1 tablespoon ketchup
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce

Instructions:

  1. Prepare the Meat Mixture:
  • Finely chop half of the medium onion for the meat mixture. Slice the remaining half for the gravy.
  • In a large bowl, combine the ground beef, chopped onion, panko breadcrumbs, egg, ketchup, Dijon mustard, kosher salt, and a dash of Worcestershire sauce. Mix until just combined, being careful not to overwork the meat.
  • Form the mixture into 4-6 oval patties.
  1. Cook the Patties:
  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the patties to the skillet and cook for about 4-5 minutes on each side, or until browned and cooked through. Remove the patties from the skillet and set aside.
  1. Make the Gravy:
  • In the same skillet, add the butter and let it melt over medium heat.
  • Add the sliced onion and cook for about 3 minutes, until softened.
  • Add the sliced mushrooms and minced garlic, cooking until the mushrooms are tender and the onions are caramelized, about 5 minutes.
  • Sprinkle the flour over the vegetables and stir to coat. Cook for 1-2 minutes to eliminate the raw flour taste.
  • Gradually stir in the beef broth, ensuring there are no lumps. Add the ketchup, Dijon mustard, and Worcestershire sauce. Bring to a simmer and cook until the gravy has thickened, about 5-7 minutes.
  1. Combine and Serve:
  • Return the cooked patties to the skillet, spooning the gravy over them. Let them simmer in the gravy for about 5 minutes to absorb the flavors.
  • Serve the Salisbury steak with the mushroom and onion gravy over mashed potatoes, egg noodles, or rice, garnished with fresh parsley if desired.
