Rotisserie Chicken and Stuffing Casserole

This Rotisserie Chicken and Stuffing Casserole is the ultimate comfort food, combining tender shredded chicken, creamy soups, and flavorful stuffing into a hearty and satisfying dish. Ingredients

  • 1 package Stove Top stuffing mix (or more if you prefer extra stuffing)
  • 1 whole rotisserie chicken, cooked and shredded
  • 1 ½ cups water or chicken broth
  • ¼ cup butter
  • 3 stalks celery, diced
  • 1 onion, diced
  • 1 can cream of chicken soup
  • ½ can cream of mushroom soup
  • 8 ounces sour cream
  • Salt and pepper to taste

Instructions

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Lightly spray a 9 x 13-inch baking pan with cooking spray.

2. Prepare the Stuffing:

  • Bring the water or chicken broth to a boil in a medium saucepan. Add the stuffing mix once the liquid boils.
  • Remove the pan from the heat, cover, and let it sit to the side. Fluff with a fork once it’s done.

3. Cook the Vegetables:

  • In a skillet, melt the butter over medium heat. Add the diced onion and celery, and cook until they are softened.

4. Mix the Soups:

  • In a large bowl, combine the cream of chicken soup, cream of mushroom soup, and sour cream. Stir until well mixed.

5. Assemble the Casserole:

  • Spread the shredded rotisserie chicken evenly at the bottom of the prepared baking dish.
  • Layer the cooked onion and celery over the chicken.
  • Sprinkle with salt and pepper to taste.
  • Spread the soup mixture evenly over the onions and celery.
  • Top with the prepared stuffing mix, spreading it out evenly.

6. Bake:

  • Bake the casserole in the preheated oven for 1 hour, or until it is bubbly and the top is browned.

7. Serve:

  • Let the casserole cool for a few minutes before serving. Enjoy this comforting and flavorful dish!
