ROSEMARY LEMON GARLIC ROASTED CHICKEN

This Rosemary Lemon Garlic Roasted Chicken is a delightful combination of flavors that infuse into the chicken, creating a mouthwatering and aromatic dish. The rosemary adds a fragrant herbal note, while the lemon provides a citrusy brightness. Garlic enhances the overall savory profile of the chicken, making it a comforting and satisfying meal.

Rosemary Lemon Garlic Roasted Chicken

Ingredients:

  • 1 (4-5 pound) whole chicken
  • 1 lemon, cut in half
  • 1 tablespoon fresh rosemary, finely minced
  • 3 sprigs fresh rosemary
  • ½ teaspoon garlic powder
  • Sea salt to taste
  • Ground black pepper to taste
  • 1 garlic bulb, peeled and divided into cloves

How To Make Rosemary Lemon Garlic Roasted Chicken:

Step 1: Prep the Chicken

  1. Remove the organs from inside the chicken and discard. Pat any excess juices off the chicken using a paper towel.

Step 2: Season the Chicken

  1. Liberally sprinkle salt and pepper on all sides of the chicken, including the interior. Rub minced rosemary on all exterior sides of the chicken. Sprinkle garlic powder over the exterior.

Step 3: Stuff with Aromatics

  1. Squeeze the juice of one half of the lemon over the exterior of the chicken. Stuff the chicken cavity with the lemon halves, rosemary sprigs, and 5-6 cloves of garlic. Place additional garlic cloves on and around the chicken, inserting them into crevices.

Step 4: Cooking Options

  1. Cook in a slow cooker on low for 4-6 hours or roast in the oven at 400 degrees for approximately 1½ hours. Roast until the skin is brown and crispy, and the juices run clear.

Tips:

  • When roasting in the oven, consider trussing the chicken (tying the legs together) to ensure even cooking.
  • For a crispier skin, you can start roasting at a higher temperature (around 425-450 degrees) for the first 15-20 minutes and then reduce the heat.
  • Use a meat thermometer to check the internal temperature of the chicken. It should reach 165 degrees Fahrenheit (74 degrees Celsius) in the thickest part of the meat.
  • Allow the chicken to rest for about 10-15 minutes before carving to let the juices redistribute, ensuring a moist and flavorful result.
  • Serve with your favorite side dishes, such as roasted vegetables or mashed potatoes, to complete the meal.
