This recipe for Roast Potatoes, Carrots, and Onions is a simple and flavorful side dish that pairs perfectly with a variety of main courses. Ingredients:

  • Carrots: Fresh carrots are peeled and cut into bite-sized pieces, adding natural sweetness and vibrant color to the dish.
  • Potatoes: Whole potatoes are diced into bite-sized pieces, with the skin left on for added texture and flavor.
  • Sweet Onion: A whole sweet onion is cut into eighths, providing a mellow and slightly sweet flavor to complement the other ingredients.
  • Garlic: Fresh garlic cloves are minced to infuse the dish with aromatic flavor.
  • Olive Oil: High-quality olive oil is used to coat the vegetables and help them roast to perfection.
  • Dried Thyme and Dried Parsley: These dried herbs add depth of flavor and earthy notes to the dish.
  • Salt and Pepper: To taste, for seasoning the vegetables and enhancing their natural flavors.

Instructions:

  1. Preheat the oven to 475ºF (245ºC) to ensure a hot oven for roasting the vegetables.
  2. Prepare the vegetables by peeling and cutting the carrots, dicing the potatoes, and cutting the onion into eighths. Mince the garlic.
  3. In a large bowl, toss the prepared vegetables with olive oil, minced garlic, dried thyme, dried parsley, salt, and pepper until evenly coated.
  4. Spread the seasoned vegetables in a single layer on a baking sheet covered with foil.
  5. Roast the vegetables covered with foil for 45 minutes to allow them to steam and cook through.
  6. Remove the foil and continue roasting for an additional 30 minutes or until the vegetables are golden brown, stirring every 10 minutes to ensure even cooking.

Tips:

  • Choose fresh, firm carrots and potatoes for the best flavor and texture.
  • For added flavor, you can sprinkle grated Parmesan cheese or fresh herbs over the roasted vegetables before serving.
  • Be sure to stir the vegetables occasionally while roasting to prevent them from sticking to the pan and ensure even browning.
  • Serve the roasted vegetables as a side dish alongside your favorite protein or as a tasty addition to salads or grain bowls.
