Ingredients:
- 1 & 3/4 cups cake flour
- 1 cup white sugar
- 1/2 cup vegetable oil
- 3/4 cup buttermilk
- 2 eggs
- 1 & 1/2 tablespoons cocoa powder
- 1 tablespoon gel red food coloring
- 1 teaspoon bicarbonate of soda
- 2 teaspoons vanilla essence
- 1 teaspoon white vinegar
- 1/2 teaspoon salt
For the Cream:
- 1/2 cup cold heavy or whipping cream
- 3 tablespoons icing sugar
- 1 teaspoon vanilla essence
Instructions:
- In a large bowl, mix sugar and oil. Add vanilla and eggs, then mix well.
- Stir in buttermilk, then add red food coloring. Mix until combined.
- Sift in flour, bicarbonate of soda, cocoa powder, and salt. Mix until all ingredients are well combined.
- Gently stir in white vinegar.
- Line a square cake pan with parchment paper and grease the sides with butter or oil. Pour the batter into the pan.
- Bake in a preheated oven at 160°C (320°F) for 50 minutes or until well baked. Allow the cake to cool completely before frosting.
- Once cooled, trim the top and edges of the cake. Cut it into half, then cut each half into two layers, creating four layers in total.
- Frost the cake with the whipped cream and sprinkle some cake crumbs on top for decoration.
