Raspberry Jello Pretzel Salad is a delightful combination of sweet and salty layers. The crunchy pretzel crust, creamy cream cheese layer, and fruity raspberry jelly topping create a harmonious dessert. It’s visually appealing and offers a perfect balance of textures and flavors.

Raspberry Jello Pretzel Salad

Ingredients:

Layer 1:

  • 1 3/4 cups crushed pretzels (about 6-7 cups of pretzels)
  • 3/4 cup salted butter, melted (12 tablespoons)
  • 3 tablespoons sugar

Layer 2:

  • 12 ounces cream cheese, softened
  • 3/4 cup sugar
  • 8 ounces cold whipped topping, softened (1 container)

Layer 3:

  • 2 cups boiling water
  • 6 ounces raspberry jelly (two 3-ounce boxes)
  • 2 cups frozen raspberries

How To Make Raspberry Jello Pretzel Salad:

Step 1: Prepare Pretzel Crust

  1. Preheat the oven to 400°F. Butter a 9×13 pan and set it aside.
  2. Crush pretzels in a food processor or blender. Mix with melted butter and sugar until well blended.
  3. Press the pretzel mixture evenly into the greased 9×13 pan and bake at 400°F for 8-10 minutes.
  4. Refrigerate for 30 minutes or until the crust is cool.

Step 2: Cream Cheese Layer

  1. In a medium bowl, cream the softened cream cheese with an electric mixer.
  2. Stir in sugar and then add the softened whipped topping.
  3. Spoon about 8 dollops on top and carefully spread it over the pretzel crust, ensuring it reaches the edges.
  4. Clean the edges with a paper towel.
  5. Refrigerate for about 1 hour or until the cream cheese layer is set.

Step 3: Raspberry Jelly Topping

  1. Boil water in a small saucepan and mix with raspberry jelly, stirring until sugar is dissolved (about 2 minutes).
  2. Add frozen raspberries and let it stand until slightly thickened.
  3. Pour the jelly mixture over the cream cheese layer and refrigerate until the jelly is firm, at least 2 hours or overnight.

Tips:

  • Ensure the pretzel crust is well-chilled before adding the cream cheese layer to prevent them from blending.
  • When spreading the cream cheese layer, be thorough at the edges to create a seal that prevents the jelly mixture from running off.
  • Allow sufficient chilling time for each layer to set properly before adding the next.

This dessert is a crowd-pleaser and a great addition to potlucks, gatherings, or any occasion where you want to impress with a delightful and unique treat.
