These Raspberry Bars with Oatmeal Crumble Topping are the perfect blend of sweet and tart, with a buttery, crumbly texture. Ingredients

  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar
  • ¼ cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ¾ cup old-fashioned whole-rolled oats (don’t use quick cook or instant)
  • Pinch of salt, optional and to taste
  • About 12 ounces raspberry preserves, with or without seeds

Instructions

  1. Prepare the Pan:
  • Preheat your oven to 350°F (175°C).
  • Line an 8-inch square baking pan with aluminum foil, and spray with cooking spray for easy removal and cleanup. Set aside.
  1. Make the Crust and Crumble:
  • In a large, microwave-safe bowl, melt the butter by heating it on high power for about 1 minute.
  • Add the granulated sugar, brown sugar, and vanilla extract to the melted butter. Whisk until well combined.
  • Add the flour, oats, and an optional pinch of salt. Stir until the mixture forms a crumbly texture with both larger clumps and finer, sand-like bits.
  • Reserve 1 heaping cup of the mixture to use as the crumble topping.
  1. Form the Crust:
  • Press the remaining mixture firmly into the prepared baking pan using a spatula or your fingers. Ensure the crust is evenly spread and packed down to form a smooth, flat layer.
  1. Add the Raspberry Layer:
  • Evenly spread the raspberry preserves over the crust. The layer of preserves should be about 1/8-inch to 1/4-inch thick, covering the crust completely.
  1. Add the Crumble Topping:
  • Take the reserved crumble mixture and, using your palm, squeeze it to form larger clumps before sprinkling it over the raspberry layer. This creates a more textured and visually appealing topping.
  1. Bake:
  • Bake in the preheated oven for 30 to 32 minutes, or until the edges are set and the center is just set and lightly golden brown.
  • Place the pan on a wire rack and allow the bars to cool in the pan for at least 2 hours before slicing and serving. This helps the bars set properly and makes them easier to cut.

  • Raspberry Preserves: Choose high-quality preserves for the best flavor. You can use seedless if you prefer a smoother texture.
