This Pumpkin Pecan Cobbler is a delightful twist on traditional cobbler, combining the warm flavors of pumpkin and spices with a crunchy pecan topping. The hot water poured over the top creates a magical transformation in the oven, resulting in a gooey, caramel-like sauce underneath a soft and spiced pumpkin cake.

Pumpkin Pecan Cobbler Recipe

Ingredients

For the Cobbler:

  • 1 cup + 3 tablespoons all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1/2 cup pumpkin puree
  • 1/4 cup milk
  • 1/4 cup melted butter or vegetable oil
  • 1 1/2 teaspoons vanilla extract

For the Topping:

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup chopped pecans
  • 1 1/2 cups very hot water

Instructions

  1. Preheat the Oven:
  • Preheat your oven to 350°F (175°C).
  1. Prepare the Cobbler Batter:
  • In a medium-sized bowl, whisk together the flour, baking powder, salt, granulated sugar, cinnamon, nutmeg, and cloves.
  • In a separate smaller bowl, combine the pumpkin puree, milk, melted butter (or vegetable oil), and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until well combined to form a thick batter.
  • Transfer the batter into an 8-inch casserole dish with high sides, spreading it out evenly.
  1. Prepare the Topping:
  • In another bowl, mix together the granulated sugar, brown sugar, and chopped pecans.
  • Evenly sprinkle this sugar-pecan mixture over the top of the batter in the casserole dish.
  1. Add the Hot Water:
  • Carefully pour the very hot water over the entire surface of the dish. Do not stir; the water will form a separate layer.
  1. Bake:
  • Place the casserole dish on a baking sheet to catch any spills and bake in the preheated oven for about 40 minutes, or until the center is set and the top is golden brown.
  1. Cool and Serve:
  • Allow the cobbler to cool for 5-10 minutes before serving. This helps the layers set properly.
  • Serve warm with a sprinkle of additional pecans and a scoop of vanilla ice cream, if desired.

Description and Tips

Tips:

  • Baking Dish: Ensure your baking dish has high sides to prevent overflow.
  • Baking Sheet: Place the baking dish on a baking sheet to catch any bubbling over.
  • Hot Water: Pour the hot water slowly and evenly over the batter to ensure it penetrates the mixture without stirring.
  • Rest Time: Let the cobbler rest for a few minutes after baking to allow the flavors to meld and the sauce to thicken.
  • Serving: This cobbler is best enjoyed warm, topped with a scoop of vanilla ice cream or a dollop of whipped cream for added decadence.

This easy and delicious dessert is perfect for autumn gatherings or a cozy night in, offering a comforting and satisfying end to any meal. Enjoy the rich flavors and delightful textures of this pumpkin pecan cobbler!
