Pumpkin Cream Cheese Bars

These Pumpkin Cream Cheese Bars are a delightful autumn treat, combining the warm flavors of pumpkin and spice with a creamy, sweet swirl of cream cheese. Perfect for holiday gatherings or just a cozy fall dessert, these bars are sure to be a hit. The optional pecans add a delightful crunch, but the bars are just as delicious without them.

Tips:

  1. Room Temperature Ingredients: Ensure that the cream cheese is softened to room temperature for a smooth filling.
  2. Marbling Technique: When marbling the cream cheese mixture, don’t go all the way to the bottom of the pan to maintain the distinct layers.
  3. Pumpkin Pie Spice Substitute: If you don’t have pumpkin pie spice, use a blend of cinnamon, nutmeg, ginger, and cloves.

Ingredients:

Filling:

  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract

Batter:

  • 1 cup canned pumpkin puree
  • 1 cup sugar
  • 1 egg
  • 1/3 cup vegetable oil
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons pumpkin pie spice (or a mix of cinnamon, nutmeg, ginger, and cloves)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: 1/2 cup chopped pecan pieces

Instructions:

  1. Preheat Oven:
  • Preheat your oven to 375°F (190°C).
  • Spray a 9×13-inch baking pan with cooking spray and set aside.
  1. Prepare the Filling:
  • In a medium bowl, use a hand mixer to blend together the softened cream cheese, 1/4 cup sugar, 1 egg, and 1/2 teaspoon vanilla extract until smooth. Set aside.
  1. Prepare the Batter:
  • In a large mixing bowl, combine the pumpkin puree, 1 cup sugar, 1 egg, and 1/3 cup vegetable oil. Mix until well combined.
  • Add the flour, pumpkin pie spice, baking powder, baking soda, and salt to the wet mixture. Stir until well mixed.
  1. Assemble the Bars:
  • Pour the pumpkin batter into the prepared baking dish, spreading it evenly to cover the bottom of the pan.
  • Add dollops of the cream cheese mixture over the pumpkin batter.
  • Use a knife to cut through the batter in an up and down pattern, then repeat in the opposite direction to create a marbled effect. Avoid going all the way to the bottom of the pan.
  • If desired, sprinkle the chopped pecans over the top.
  1. Bake:
  • Bake in the preheated oven for 25-28 minutes, or until a toothpick inserted into the center comes out clean.
  1. Cool and Serve:
  • Allow the bars to cool completely in the pan.
  • Cut into squares and store in the refrigerator.
