This easy crockpot recipe for Polish sausage, sauerkraut, and potatoes is a hearty and comforting meal that’s perfect for busy weeknights or lazy weekends. With just a handful of simple ingredients, you can create a delicious one-pot meal that’s sure to satisfy the whole family. The combination of savory Polish sausage, tangy sauerkraut, and tender potatoes cooked low and slow in the crockpot results in a flavorful dish that’s full of comfort and warmth.

Ingredients:

  • 5-6 medium gold potatoes, cut into large chunks
  • 16 oz sauerkraut
  • 1 ½ lb Polish sausage, cut into large pieces
  • ½ cup chicken broth
  • 1 tsp caraway seeds
  • 1 bay leaf
  • Salt and pepper to taste

Instructions:

  1. Layer Ingredients: Begin by placing the sauerkraut into the bottom of the crockpot. Next, layer the potatoes over the sauerkraut, followed by the pieces of Polish sausage.
  2. Prepare Seasoning Mixture: In a small bowl, combine the chicken broth, caraway seeds, and bay leaf. Stir well to ensure the ingredients are evenly distributed.
  3. Add Seasoning Mixture: Pour the seasoning mixture over the ingredients in the crockpot, ensuring that it is evenly distributed. Season with salt and pepper to taste.
  4. Cook: Place the lid on the crockpot and cook on high for 4 hours, or until the potatoes are tender and the sausage is cooked through.
  5. Serve: Once the cooking time is complete, mix the ingredients well to ensure that the flavors are evenly distributed. Serve hot and enjoy!

Tips:

  • Feel free to use your favorite variety of potatoes for this recipe. Russet or red potatoes work well in addition to gold potatoes.
  • If you prefer a stronger flavor, you can add additional seasonings such as garlic powder, onion powder, or smoked paprika to the seasoning mixture.
  • For extra depth of flavor, consider browning the sausage pieces in a skillet before adding them to the crockpot.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat gently in the microwave or on the stovetop before serving.
