Pistachio Pineapple Cake

This Pistachio Pineapple Cake is a delightful, moist, and flavorful dessert that combines the nutty flavor of pistachios with the tropical sweetness of pineapple. Topped with a creamy pistachio frosting and a sprinkling of chopped pistachios, this cake is perfect for any special occasion or just as a treat to satisfy your sweet tooth.

Ingredients

For the Cake:

  • 1 box angel food cake mix
  • 1 (3.4 oz) box pistachio pudding mix
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 (20 oz) can crushed pineapple with juices

For the Frosting:

  • 1 (8 oz) tub Cool Whip, thawed
  • 2/3 cup whole milk
  • 1 (3.4 oz) box pistachio pudding mix
  • Chopped pistachios for decoration (optional)

Instructions

1. Prepare the Cake:

  • Preheat your oven to 350°F (175°C).
  • Grease a 9×13-inch baking dish with non-stick spray or butter.
  • In a large mixing bowl, combine the angel food cake mix, pistachio pudding mix, vegetable oil, eggs, and the entire can of crushed pineapple with its juices.
  • Beat the mixture until it is well combined and smooth.
  • Pour the batter into the prepared baking dish and spread it out evenly.

2. Bake:

  • Bake the cake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Once done, remove the cake from the oven and let it cool completely in the baking dish.

3. Prepare the Frosting:

  • In a medium bowl, whisk together the second box of pistachio pudding mix and the whole milk until the mixture thickens.
  • Gently fold in the thawed Cool Whip until the frosting is smooth and well combined.

4. Frost and Decorate:

  • Once the cake has cooled completely, spread the frosting evenly over the top of the cake.
  • Chill the frosted cake in the refrigerator for at least 2 hours before serving to allow the flavors to meld and the frosting to set.
  • Just before serving, sprinkle chopped pistachios over the top of the cake for added crunch and visual appeal, if desired.

5. Serve and Enjoy:

  • Slice the cake into squares and serve chilled. Enjoy the moist, flavorful cake with its creamy pistachio frosting!

Tips

  • Cool Whip Alternative: If you prefer, you can use homemade whipped cream instead of Cool Whip for a fresher taste.
  • Variations: Add a few drops of green food coloring to the frosting for a more vibrant pistachio look.
  • Storage: Store any leftover cake covered in the refrigerator for up to 3 days.
