Pioneer Woman Sausage Gravy

Ingredients:

  • 1 pound breakfast sausage, hot or mild
  • 1/3 cup all-purpose flour
  • 3 to 4 cups whole milk, more to taste
  • 1/2 teaspoon seasoned salt
  • 2 teaspoons freshly ground black pepper, more to taste
  • 12 cooked biscuits, warmed, for serving

Instructions:

  1. Cook the Sausage:
  • Tear the sausage into small pieces with your fingers and place them in a single layer in a large heavy skillet. Cook over medium-high heat, breaking up the sausage with a spoon, until browned and no longer pink.
  1. Add Flour:
  • Reduce the heat to medium-low. Sprinkle half of the flour over the sausage and stir until it is fully absorbed. Gradually add the remaining flour, stirring constantly, and cook for another minute to eliminate any raw flour taste.
  1. Make the Gravy:
  • Slowly pour in the milk, stirring continuously to combine. Cook the mixture, stirring frequently, until the gravy thickens, about 10 to 12 minutes. The gravy should be thick and luscious. If it becomes too thick, add more milk, a little at a time, until you reach the desired consistency.
  1. Season the Gravy:
  • Sprinkle in the seasoned salt and black pepper. Taste and adjust the seasoning as needed, adding more salt or pepper to taste.
  1. Serve:
  • Spoon the sausage gravy over warm, cooked biscuits and serve immediately.

Tips:

  • Consistency: If the gravy thickens too quickly or becomes too thick, add additional milk in small increments until you achieve the desired consistency.
  • Seasoning: Adjust the amount of black pepper and seasoned salt according to your taste preference. Freshly ground black pepper adds a nice kick, but you can reduce it if you prefer a milder flavor.
