Pineapple Quick Bread is a delightful, moist loaf bursting with the tropical flavors of pineapple. This easy-to-make bread is perfect for breakfast, brunch, or a sweet snack, and it’s finished with a luscious pineapple glaze that adds an extra touch of sweetness.

Ingredients:

For the Bread:

  • ⅛ tsp salt
  • ½ cup butter, softened
  • 1 cup crushed pineapple, drained, liquid reserved
  • 2 large eggs
  • 1 ½ cups all-purpose flour
  • ¼ cup reserved pineapple liquid
  • ¼ cup granulated sugar
  • 2 tbsp milk
  • 2 tsp baking powder

For the Glaze:

  • 2 tbsp reserved pineapple liquid
  • 1 cup confectioners sugar
  • 1 tsp vanilla extract

Instructions:

1. Preheat and Prep:

  • Preheat your oven to 350°F (175°C).
  • Grease a loaf pan generously to prevent sticking.

2. Mix Dry Ingredients:

  • In a medium-sized mixing bowl, sift together the flour, salt, and baking powder to ensure they are well combined and free of lumps.

3. Cream Butter and Sugar:

  • In a separate mixing bowl, combine the softened butter and granulated sugar.
  • Beat them together until the mixture is smooth and creamy.

4. Add Eggs:

  • Add the eggs to the butter and sugar mixture, mixing thoroughly until fully incorporated.

5. Combine Wet and Dry Ingredients:

  • Gradually alternate between adding the reserved ¼ cup of pineapple liquid and the sifted dry ingredients into the wet mixture, mixing well after each addition.
  • Stir in the milk until the batter is smooth.

6. Add Pineapple:

  • Gently fold the crushed pineapple into the batter, ensuring it is evenly distributed.

7. Bake:

  • Pour the batter into the prepared loaf pan and spread it out evenly.
  • Bake in the preheated oven for 50-55 minutes, or until a skewer inserted into the center comes out clean.

8. Cool:

  • Allow the loaf to cool in the pan for 10-15 minutes, then transfer it to a cooling rack to cool completely.

9. Prepare the Glaze:

  • In a small bowl, mix together the 2 tbsp of reserved pineapple liquid, confectioners sugar, and vanilla extract until smooth.

10. Glaze the Bread:

  • Drizzle the glaze over the cooled loaf.
  • Allow the glaze to set before slicing and serving.
