Ingredients:

  • Crushed Pineapple: Adds sweetness and moisture to the cake.

  • Instant Vanilla Pudding: Enhances the flavor and moistness of the cake.
  • Eggs: Provide structure and help bind the ingredients together.
  • Vegetable Oil: Adds moisture to the cake batter.
  • Vanilla Bean Pod or Vanilla Extract: Infuses the cake with aromatic vanilla flavor.
  • Powdered Sugar: Used in both the soaking mixture and the glaze to add sweetness and texture.
  • Butter: Melts into the soaking mixture, adding richness and flavor.
  • Confectioners Glaze: A simple mixture of powdered sugar and milk, used to drizzle over the cooled cake for added sweetness and decoration.

How To Make It:

  1. Preheat Oven: Preheat the oven and prepare a bundt pan with cooking spray.
  2. Prepare Batter: Mix together the cake mix, pudding mix, eggs, oil, pineapple juice, and vanilla until smooth. Fold in the crushed pineapple and pour the batter into the prepared pan.

Tips:

  • Use Fresh or Canned Pineapple: You can use either fresh or canned crushed pineapple for this recipe, depending on what you have available.
  • Poke Holes Generously: Make sure to poke holes in the cake at regular intervals to allow the soaking mixture to penetrate evenly throughout the cake.
  • Don’t Overmix: Mix the batter until just combined to avoid overmixing, which can result in a dense cake.
