Pecan Pie Muffins are a delightful treat that captures the essence of a classic pecan pie in a convenient, handheld form. With their rich, buttery flavor and crunchy pecan bits, these muffins are perfect for breakfast, brunch, or a sweet snack. The simple ingredients and quick preparation make them a go-to recipe for any occasion.

Tips:

  1. Greasing the Muffin Cups: Make sure to grease the muffin cups generously to prevent sticking. Alternatively, use paper liners for easier removal.
  2. Mixing: Do not overmix the batter; stir just until the dry ingredients are incorporated to ensure tender muffins.
  3. Cooling: Let the muffins cool slightly in the pan before running a knife around the edges to remove them. This helps prevent them from breaking apart.

Ingredients:

  • 1 cup packed light brown sugar
  • 1/2 cup all-purpose flour
  • 2 cups chopped pecans
  • 2/3 cup butter, softened
  • 2 eggs, beaten

Instructions:

  1. Preheat and Prepare:
  • Preheat your oven to 350°F (175°C).
  • Generously grease mini or regular muffin cups to prevent sticking.

  • In a medium bowl, stir together the light brown sugar, all-purpose flour, and chopped pecans.

  • Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
  1. Bake:
  • For mini muffins, bake for 12-13 minutes.
  • For regular-sized muffins, bake for 15-17 minutes.
  • The muffins should be golden brown and a toothpick inserted into the center should come out clean.
  1. Cool and Remove:
  • Allow the muffins to cool in the pan for a few minutes.
  • Run a knife around the edge of each muffin to loosen it and then gently pop it out.
