This gourmet-style pizza combines the perfect balance of sweet, salty, and savory flavors. With juicy pears, savory prosciutto, and creamy gorgonzola cheese, each bite is a delightful mix of textures and tastes. Caramelized onions add depth, while smoked gouda and mozzarella bring a gooey, melty element to every slice. This pizza makes an elegant appetizer or a deliciously unique main dish for a special occasion.

Ingredients

Caramelized Onions

  • 2 tsp olive oil
  • 1 yellow onion, thinly sliced
  • ¼ tsp kosher salt
  • Freshly ground black pepper, to taste

Pizza

  • 1 lb pizza dough
  • 1 tsp olive oil
  • Kosher salt and freshly ground black pepper, to taste
  • 1 tsp fresh thyme leaves
  • 1 pear, thinly sliced
  • ½ cup shredded smoked gouda cheese
  • ½ cup shredded part-skim mozzarella cheese
  • ¼ cup crumbled gorgonzola cheese
  • 3 slices prosciutto, rolled up and thinly sliced

Instructions

  1. Preheat and Prep:
  • Preheat the oven to 450°F. Lightly spray a baking sheet or pizza stone with cooking spray to prevent sticking.
  1. Caramelize the Onions:
  • In a skillet, heat 2 teaspoons of olive oil over medium heat. Add the sliced onion and cook, stirring occasionally, until soft and golden brown, about 10 minutes. Season with salt and pepper.
  1. Prepare the Dough:
  • Roll the pizza dough onto the prepared sheet or stone. Brush with 1 teaspoon of olive oil, then sprinkle with kosher salt, black pepper, and fresh thyme.
  1. Add Toppings:
  • Evenly distribute the shredded gouda, mozzarella, and gorgonzola crumbles over the pizza dough. Arrange the pear slices, prosciutto, and caramelized onions on top.
  1. Bake:
  • Place the pizza in the oven and bake for 10-15 minutes, or until the crust is golden and the cheese is bubbly.
  1. Serve:
  • Remove the pizza from the oven, slice, and enjoy immediately while warm.

Tips for the Perfect Pizza

  • Dough Stretching: Roll or stretch the dough thinly for a crispier base, and make sure it’s even to avoid over- or under-cooked spots.
  • Cheese Options: For a milder flavor, replace gorgonzola with feta or goat cheese.
  • Pear Selection: Use a ripe but firm pear (such as Bosc or Anjou) to prevent it from turning mushy during baking.
  • Extra Flavor: After baking, drizzle with a little honey or balsamic glaze for added sweetness that complements the gorgonzola and prosciutto.

This pizza is an impressive yet easy-to-make dish that’s perfect for gatherings or treating yourself to a unique meal at home!
