Peanut Butter Cup Cookies

Peanut Butter Cup Cookies are a delightful fusion of soft, peanut buttery cookies and rich, chocolatey Reese’s peanut butter cups. Perfect for any occasion, these mini treats are easy to make and irresistible to both kids and adults alike. The combination of creamy peanut butter and smooth chocolate creates a heavenly flavor in every bite.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 1/2 cup peanut butter
  • 1/2 cup packed brown sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • About 30-40 miniature Reese’s peanut butter cups, unwrapped

Instructions

  1. Preheat and Prepare:
  • Preheat your oven to 375°F (190°C).
  • Grease a mini muffin tin or line it with paper liners.
  1. Mix the Dry Ingredients:
  • In a medium bowl, whisk together the flour, salt, and baking soda. Set aside.
  1. Cream the Wet Ingredients:
  • In a large bowl, cream together the butter, white sugar, peanut butter, and brown sugar until the mixture is light and fluffy.
  • Beat in the egg, vanilla extract, and milk until well combined.
  1. Combine Wet and Dry Ingredients:
  • Gradually add the dry flour mixture to the wet ingredients, mixing until well combined.
  1. Shape and Bake:
  • Shape the dough into 1-inch balls.
  • Place each ball into the prepared mini muffin tin.
  • Bake in the preheated oven for about 8 minutes. Be careful not to overbake; the cookies should be soft.
  1. Add Peanut Butter Cups:
  • Immediately after removing the cookies from the oven, press a miniature Reese’s peanut butter cup into the center of each cookie.
  • Allow the cookies to cool in the tin for a few minutes before carefully removing them to a wire rack to cool completely.

Tips

  • Room Temperature Ingredients: Ensure the butter and egg are at room temperature before starting. This helps in achieving a smooth, well-mixed dough.
  • Do Not Overbake: The cookies should still be soft when you press the peanut butter cups into them. They will continue to set as they cool.
  • Peanut Butter Cups: Unwrap the Reese’s peanut butter cups before baking to save time and ensure they are ready to be pressed into the cookies while they are still warm.
  • Storage: Store the cooled cookies in an airtight container at room temperature for up to a week, or freeze for longer storage.
