These Peanut Butter Chocolate Chip Bars are the perfect combination of rich, creamy peanut butter and sweet, melty chocolate in every bite. With a chewy texture and a hint of vanilla, these bars are an easy-to-make treat that satisfies any sweet tooth. The recipe comes together in just minutes and bakes up to golden perfection, making it a go-to for any occasion.

Ingredients:

  • ½ cup unsalted butter, melted
  • ⅓ heaping cup peanut butter* (choose your favorite creamy or crunchy peanut butter)
  • 1 large egg
  • 1 cup light brown sugar, packed
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • ½ teaspoon salt, or to taste
  • 1 cup semi-sweet chocolate chips + 2 tablespoons, for sprinkling

Instructions:

  1. Prepare the Baking Pan:
  • Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with aluminum foil, leaving some overhang on the sides for easy removal. Lightly spray the foil with cooking spray and set the pan aside.
  1. Mix the Wet Ingredients:
  • In a large, microwave-safe bowl, melt the butter by microwaving it for about 1 minute on high power.
  • Let the melted butter cool slightly to prevent scrambling the egg. Add the peanut butter, egg, brown sugar, and vanilla extract. Whisk the mixture until smooth and creamy.
  1. Combine with Dry Ingredients:
  • Add the flour and salt to the wet mixture. Stir until just combined, being careful not to overmix as this can result in tougher bars.
  • Fold in 1 cup of semi-sweet chocolate chips, ensuring they are evenly distributed throughout the batter.
  1. Prepare to Bake:
  • Pour the batter into the prepared baking pan, spreading it evenly with a spatula.
  • Sprinkle the remaining 2 tablespoons of chocolate chips over the top, gently pressing them into the batter.
  1. Bake the Bars:
  • Bake the bars in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs (but no raw batter).
  • Remove the pan from the oven and let the bars cool in the pan for at least 30 minutes before slicing.
  1. Serve and Store:
  • Once cooled, use the foil overhang to lift the bars out of the pan. Slice into squares and enjoy!
  • Store the bars in an airtight container at room temperature for up to 1 week. They can also be frozen for up to 6 months for later enjoyment.

  • Peanut Butter Options: For a different texture, try using crunchy peanut butter or even a natural variety, though the latter may result in a slightly different texture.
  • Mix-Ins: Feel free to experiment with different mix-ins like white chocolate chips, chopped nuts, or even a swirl of caramel for extra indulgence.
  • Cutting the Bars: For clean cuts, use a sharp knife and wipe it between slices. You can also chill the bars slightly before cutting to firm them up.
