Peach Crisp

Peach Crisp is a delightful summer dessert that combines juicy peaches with a sweet, crunchy topping. This classic dessert is simple to make and perfect for showcasing ripe peaches. Served warm with a scoop of vanilla ice cream, it’s a crowd-pleaser that’s sure to impress

Ingredients

Filling:

  • 3 pounds peaches, peeled and sliced into 1/2 inch slices (about 8 peaches or around 6 cups), just ripe but not overly ripe
  • 1/4 cup white sugar
  • 2 tablespoons lemon juice
  • 2 tablespoons cornstarch
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup rolled old-fashioned oats
  • 1/4 cup butter, cold but slightly soft
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • Dash of salt

Instructions

  1. Preheat and Prepare the Baking Dish:
  • Preheat your oven to 375 degrees F. Grease an 8×8 inch square baking dish.
  1. Prepare the Filling:
  • In a large bowl, combine the sliced peaches, white sugar, lemon juice, cornstarch, vanilla extract, and a pinch of salt.
  • Toss the mixture until the peaches are well coated, then pour it into the prepared baking dish.
  1. Make the Topping:
  • In a medium bowl, mix together the flour, brown sugar, oats, baking powder, cinnamon, and a dash of salt.
  • Add the cold, slightly softened butter. Use a pastry cutter, fork, or your hands to combine until the mixture resembles coarse crumbs.
  • Sprinkle the topping evenly over the peach filling.

  • Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and crisp.
  • Serve warm, ideally with a scoop of vanilla ice cream.

Tips

  • Peach Ripeness: Use peaches that are just ripe but not overly soft to ensure they hold their shape during baking.
  • Peeling Peaches: To peel peaches easily, blanch them in boiling water for 30 seconds, then transfer them to an ice bath. The skins should slip off easily.
  • Topping Consistency: Ensure the butter is cold but slightly soft for a crumbly topping. If the butter is too soft, the topping may melt too much during baking.
  • Serving: Peach Crisp is best served warm with a scoop of vanilla ice cream or a dollop of whipped cream. It can also be enjoyed at room temperature.
