Parmesan Meatloaf

This Parmesan Meatloaf is a delicious twist on a classic comfort food. Combining the rich flavors of Italian herbs, Parmesan cheese, and marinara sauce, this meatloaf is juicy, flavorful, and sure to be a hit with your family. It’s easy to prepare and perfect for a hearty dinner.

Ingredients

  • 1 pound ground beef
  • 2 large eggs
  • 1/4 cup breadcrumbs
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 to 2 garlic cloves, finely minced
  • 1 small yellow onion, grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup pasta sauce (marinara sauce, homemade or store-bought, meatless)
  • 1/2 cup shredded Italian cheese blend

Instructions

1. Preheat and Prepare:

  • Preheat your oven to 350°F (175°C).
  • Lightly grease a loaf pan with cooking spray and set it aside. A glass bread loaf pan works well for this recipe.

2. Mix the Ingredients:

  • In a large bowl, combine the ground beef, eggs, breadcrumbs, dried basil, dried thyme, dried oregano, minced garlic, grated onion, salt, pepper, and grated Parmesan cheese.
  • Mix the ingredients gently to avoid overhandling the mixture, which can make the meatloaf tough.

3. Form the Loaf:

  • Place the meat mixture into the greased loaf pan.
  • Shape the mixture into a loaf, pressing it gently to ensure it holds together.
  • Pour the pasta sauce evenly over the top of the meatloaf.

4. Bake:

  • Place the loaf pan on a baking sheet to catch any drips and bake in the preheated oven for 1 hour.
  • After 1 hour, remove the meatloaf from the oven and carefully drain any excess grease.

5. Add Cheese:

  • Sprinkle the shredded Italian cheese blend over the top of the meatloaf.
  • Return the meatloaf to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

6. Rest and Serve:

  • Remove the meatloaf from the oven and let it sit for 5-10 minutes before slicing.
  • This resting time allows the juices to redistribute, making for a moister meatloaf.

7. Serve and Enjoy:

  • Slice the meatloaf and serve with your favorite sides. This meatloaf pairs well with mashed potatoes, steamed vegetables, or a fresh green salad.

Tips:

  • Meat Mixture: Handle the meat mixture as little as possible to keep the meatloaf tender.
  • Onions: Grating the onion instead of chopping it ensures it blends well into the meatloaf, adding moisture and flavor without large pieces.
  • Cheese: For extra flavor, you can mix some shredded cheese into the meat mixture as well.
  • Pasta Sauce: Use a good quality marinara sauce for the best flavor. Homemade or store-bought both work fine.
