Parmesan Garlic Roasted Potatoes

Parmesan Garlic Roasted Potatoes are a delicious and easy side dish that pairs perfectly with any main course. The red potatoes are halved and coated with a flavorful mixture of olive oil, garlic, and herbs, then roasted to golden perfection with a crispy exterior and tender interior. Finished with a drizzle of melted butter and a sprinkle of fresh parsley, these potatoes are sure to be a hit at any meal.

Ingredients:

  • 3 pounds red potatoes, halved
  • 2 tablespoons olive oil
  • 5 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/3 cup grated Parmesan cheese
  • Kosher salt and freshly ground black pepper, to taste
  • 2 teaspoons unsalted butter
  • 2 teaspoons chopped parsley leaves

Instructions:

  1. Preheat the Oven: Set your oven to 400°F (200°C). Prepare a baking sheet by spraying it with non-stick spray or lightly greasing it with a layer of oil.
  2. Prepare the Potatoes: Cut the red potatoes in half and place them in a large bowl.
  3. Season the Potatoes: Add the olive oil, minced garlic, dried thyme, oregano, basil, and grated Parmesan cheese to the bowl. Sprinkle with kosher salt and freshly ground black pepper to taste. Mix everything together until the potatoes are evenly coated.
  4. Arrange and Bake: Spread the seasoned potatoes in an even layer on the prepared baking sheet, with the cut sides facing up. Bake in the preheated oven for 25-30 minutes, flipping them halfway through the cooking time to ensure they become golden brown and crispy.
  5. Finish and Serve: Melt the unsalted butter on the stove or in the microwave. Drizzle the melted butter over the roasted potatoes before serving. Garnish with chopped parsley leaves for a fresh touch.

Tips:

  • Ensure the potatoes are evenly coated with the seasoning mixture for the best flavor.
  • For extra crispiness, you can broil the potatoes for the last 2-3 minutes of baking.
  • Use freshly grated Parmesan cheese for a more intense flavor.
  • If you prefer a stronger garlic flavor, you can add an extra clove or two of minced garlic.
  • Serve the potatoes immediately after baking for the best texture and taste.
