These Overnight Blueberry Waffle Breakfast Bars are a delightful and convenient make-ahead breakfast option. Combining the flavors of blueberry waffles with a creamy filling, fresh blueberries, and a buttery streusel topping, these bars are perfect for a weekend brunch or a special breakfast treat. The addition of a sweet glaze makes them extra indulgent.
Ingredients
For the Waffles:
- 8 frozen blueberry waffles, thawed and cut into 1-inch pieces (plain waffles may be substituted); divided
- 4 ounces cream cheese, softened (lite version is okay)
- 2 tablespoons light brown sugar, packed
- 1 cup fresh blueberries
- ¼ cup unsalted butter, melted
- 4 large eggs
- ½ cup milk or half-and-half (I used unsweetened cashewmilk)
- 3 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
For the Streusel:
- ¼ cup light brown sugar, packed
- 3 tablespoons unsalted butter, softened
- 3 tablespoons all-purpose flour
- 1 teaspoon cinnamon
For the Glaze:
- 1 cup confectioners’ sugar
- 1 tablespoon light-colored corn syrup (helps keep the glaze softer)
- 1 tablespoon water
Instructions
- Prepare the Pan:
- Line an 8×8-inch pan with aluminum foil and spray with cooking spray; set aside.
- Assemble the Waffles:
- Chop the waffles and add about 60% (5 waffles) to the prepared pan. Reserve the remainder; set aside.
- Make the Cream Cheese Mixture:
- In a medium bowl, beat the cream cheese and brown sugar with a handheld electric mixer on medium-high speed until combined and fluffy, about 2 minutes.
- Drop the cream cheese mixture by rounded tablespoons evenly over the waffles.
- Add Blueberries:
- Evenly scatter the fresh blueberries over the waffles. Note: Fresh blueberries are recommended; frozen blueberries may alter the texture.
- Add Remaining Waffles:
- Evenly top with the reserved waffles; set aside.
- Prepare the Egg Mixture:
- In a medium, microwave-safe bowl, melt the butter on high power for about 1 minute. Allow it to cool slightly.
- Add the eggs, milk, granulated sugar, vanilla, and cinnamon. Whisk to combine.
- Evenly pour the mixture over the waffles. Cover and refrigerate overnight.
- Bake the Bars:
- On the morning of baking, preheat the oven to 350°F. Remove the pan from the fridge and uncover it.
- Make the Streusel:
- In a medium bowl, add the brown sugar, butter, flour, and cinnamon. Use two forks to cut the butter into the dry ingredients until crumbs form. There will be a mixture of pea-sized crumbs and sandy bits.
- Evenly sprinkle the streusel over the waffles.
- Bake:
- Bake uncovered for about 40 minutes, or until the top is set and lightly golden brown.
- Allow the waffles to cool in the pan on a wire rack for about 15 minutes. While cooling, prepare the glaze.
- Make the Glaze:
- In a medium bowl, whisk together the confectioners’ sugar, corn syrup, and water until smooth and combined.
- Evenly drizzle the glaze over the cooled waffles.
- Serve:
- These breakfast bars are best served warm and fresh, but any leftovers can be kept airtight in the fridge for up to 5 days. Reheat gently as desired.
Tips
- Make-Ahead Convenience: Prepare the night before and bake in the morning for a stress-free breakfast.
- Texture Variations: Use fresh blueberries for the best texture. Frozen blueberries may add extra moisture.
- Streusel Tip: For a more even crumb, use your fingers to mix the streusel ingredients.
- Glaze Alternative: If you don’t have corn syrup, substitute with milk or water, but note the glaze will be a bit firmer.
These Overnight Blueberry Waffle Breakfast Bars are a delicious way to start your day, combining convenience with a burst of blueberry flavor and creamy richness. Enjoy!
