Oven Roasted Smoked Sausage and Potatoes

This savory dish combines the hearty flavors of smoked turkey sausage and baby potatoes, all roasted to perfection with a blend of spices. It’s an easy, one-pan meal that’s perfect for a weeknight dinner or a casual gathering.

Ingredients:

  • 1 lb smoked turkey sausage, cut into rounds
  • 1 large onion, peeled and chopped
  • 6 baby red potatoes, halved
  • 6 baby golden potatoes, halved
  • 1 tablespoon olive oil
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon Cajun spice

Instructions:

  1. Preheat and Prepare:
  • Preheat your oven to 400°F (200°C).
  • Line a large baking sheet with tin foil and spray with cooking spray. Set aside.
  1. Prepare Ingredients:
  • Cut the smoked turkey sausage into large chunks.
  • Chop the onion into large pieces.
  • Wash and pat dry the baby potatoes, then cut them in half.
  1. Combine Ingredients:
  • In a large bowl, add the sausage, chopped onion, and halved baby potatoes.
  • Drizzle with olive oil and toss to coat evenly.
  1. Season:
  • In a small bowl, combine the fine sea salt, freshly ground black pepper, smoked paprika, and Cajun spice.
  • Sprinkle the seasoning mixture over the sausage and potato mixture, and toss again to ensure everything is well coated.
  1. Bake:
  • Pour the seasoned sausage and potatoes onto the prepared baking sheet, spreading them out evenly.
  • Place the baking sheet in the preheated oven and roast for 55 minutes.
  • Check the potatoes for doneness by inserting a fork; they should be tender and fully cooked. If necessary, cook for an additional 5 minutes.
  1. Serve:
  • Remove from the oven and let cool slightly before serving.
  • Enjoy your flavorful, oven-roasted smoked sausage and potatoes!

Tips:

  • Uniform Pieces: Ensure that the sausage and potatoes are cut into uniform sizes for even cooking.
  • Crispiness: For extra crispy edges, avoid overcrowding the baking sheet. Spread the ingredients in a single layer.
  • Spice Level: Adjust the amount of Cajun spice to your preference for more or less heat.
  • Leftovers: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
