Oven Fried Potatoes and Onions is a simple yet delicious side dish that combines the rich flavors of tender red potatoes, sweet onions, and smoky bacon. The dish is topped with butter for added richness and then baked until the potatoes are perfectly tender. A quick broil at the end ensures a crispy, golden-brown finish that adds a delightful crunch. This dish pairs beautifully with a variety of main courses and is perfect for family dinners or gatherings.

Ingredients:

  • 5 pounds red potatoes, thinly sliced or cubed
  • 1 onion, finely chopped
  • 6 slices bacon, chopped
  • 1/2 cup butter, diced
  • Salt and pepper, to taste

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Grease a 9×13 inch casserole dish to prevent sticking.
  2. Prepare Ingredients: Place the sliced or cubed potatoes in an even layer in the greased dish. Sprinkle the finely chopped onion and chopped bacon evenly over the potatoes. Dot the mixture with diced butter, ensuring it’s well distributed. Season with salt and pepper to taste.
  3. Bake Covered: Cover the casserole dish with aluminum foil to retain moisture and bake in the preheated oven for 45 minutes.
  4. Brown the Potatoes: After 45 minutes, remove the foil and stir the potatoes to ensure even cooking. Turn the oven to the broiler setting to achieve a crispy, golden-brown finish. Broil for approximately 5 minutes, stirring every minute to prevent burning and to ensure even browning.
  5. Serve: Once the potatoes are crispy and browned to your liking, remove the dish from the oven. Serve immediately while hot and enjoy the savory blend of tender potatoes, caramelized onions, and crispy bacon.

  • Uniform Slicing: Ensure the potatoes are sliced or cubed uniformly for even cooking.
